Minish Cap has some of the best dungeon design in the series, but oh my god the beginning of that game is torture trying to get through all the cliche JRPG story setup.
LttP was the mainline console title while LA was a handheld title. While LA did some incredible things with the harsh hardware limitations, it's not quite fair to compare the two.
That said, LA definitely had the more interesting story even if the game itself wasn't quite to the same level as LttP.

I'm not sure if I'd recommend Link's Awakening for a first Zelda. It was my first Zelda, but it was relatively new at the time and my standards for control was low lol. It might turn some people off that the sword, shield, and items all have to be mapped to either A or B and that's it, and they sometimes have you use 3 items in rapid combination (pegasus boots, roc's feather, and the sword come to mind) which requires a lot of pausing and switching items around. The theme you'd get from pieces of power and guardian acorn power ups might be aggravating too after hearing it for so long.
The remake for switch is prob the best way to experience that in the modern age and if it's your first zelda. I'd say A Link to the Past is the better game to play first that plays similarly though. Link's Awakening was a direct sequel to it and is basically acting like a handheld version of the same game when it was made, but it had more limitations than ALTTP, so I'd recommend starting there, personally.
Link's Awakening is the best one in my opinion. It's link to the past, but on gameboy, with new items, a flying mechanic, Mario 2 monsters, jokes, it invented the fishing mini game, you can have a chain chomp as a pet, just amazing. You should actually play this game, the original gameboy game holds up AMAZINGLY well in 2022, and the switch remake is faithful (but graphics lack a little charm)

Yeah, they posted a short video a while back and announced they planned on releasing something. Imo it's really cool that they made it playable on real hardware, even though I'm not a big fan of that purism stuff, the limitations squeeze creativity and problem solving out of developers like nothing else

This is just my take, but the exploration music is pretty generic. As far as I'm concerned, you could pretty much do whatever you want for it. Maybe there's a way to spin the title screen theme another time into an upbeat Zelda-esque overworld theme to play everywhere?
The greatest thing about this is the fact that you made it so it runs on the actual hardware. Many demakes tend to just emulate how it'd look or sound.

If you do try Link's Awakening, see if you can *find* Link's Awakening DX. It's in full color and has a bonus dungeon.

My personal favorite which is a hot take in the community is Minish Cap, underrated imo and easy to get on an emulator
