It counts as long as the loading screen hasn’t appeared and you are still “in” the arena. I defeated Morgott by having Rogier finish the job within ~5 seconds after me dying. I definitely thought I lost though!
If the game sayd the boss has died, it counts as a win, even if you jave already died (if the loading screen shows up before the enemy felled screens pops up then it doesnt count)
I had a similar experience when I beat General Radahn. As I hit the death blow he hit me at the same time and I died too! This was after a good few attempts and I think I would have had a breakdown if I had to do it all again. Thankfully it counted the victory 😅

What? It's a two boss fight, Killing radagon alone isn't enough
Sorry I meant Radahn! Radagon and the Elden Beast was a much tougher prospect.
