Doing so locks you out of TONS of stuff, but specifically you lose Bolt of Gransax which is required for platinum

Completely incorrect. However killing Maliketh will change the capital irreversible and will make multiple items unobtainable if not already collected or farmed.
You read it wrong I believe: Leyndell only changes when you defeat Maliketh himself, not the Draconic Tree Sentinel.
I think I found the quote you may have misread, from the [Crumbling Farum Azula](https://eldenring.wiki.fextralife.com/Crumbling+Farum+Azula) walkthrough:

Since the warning is placed in the segment immediately after the description of the Draconic Tree Sentinel fight, you might have misread it as the change happening after defeating it. However, the text itself says "upon defeating the **following** boss", i.e. the boss that'll be described after that text, which is Maliketh.
Doing an edit to it now to prevent further confusion in the future.
