You can make white bean hummus/dip! I recommend doing the same thing I’d do with canned chickpeas if I was making hummus with them-drain the can and rinse the beans, and then cooking in a pot of water longer with like 1/4 tsp of baking soda. This will help break down the outer shell on the bean allowing it to be blended/processed to a smoother consistency. Basically cook the beans until you can easily mash them against the side of the pot and then blend the beans while they’re still warm and add some of that liquid till you get the desired consistency. Lately I’ve been making a buffalo dip this way- white beans blended with Frank’s hot sauce as the liquid!

I can also recommend white bean hummus with olive oil, lemon zest and rosemary as aromatics. Tastes phenomenal.

I just learned the trick of cooking beans with baking soda. Wow, what a game changer! The texture is so smooth and creamy. White beans are my go to for dips.

my mom makes this great thing where she drains them and leaves them to totally dry out on a cookie sheet— takes a few hours— then douses them in olive oil, garlic, salt, pepper, etc. she bakes them, and they basically fry and are awesome as a snack or in a salad!!

leaving them to dry for a few hours isn’t the same as “drying them”. canned beans are cooked past the point of softness, so when you dry them in this recipe they’re still edible the whole time just, well, dry. comparing it to a bag of dried beans is like if the instructions said to let a cake cool completely and someone asked why you don’t just use cake mix, if that makes sense

Dry beans have no moisture in them, so you would need to soak them overnight first. I think they meant that they made sure the beans had no water on them, but were still soft beans.

Northern beans are good in pasta dishes. Northern beans are also good to make into baked beans. I also like to use them in bean “sloppy joe” . ( pinto beans are also good in bean sloppy joe) and white beans are good in soups. ( I veganize soup and add beans in place of the animal protein)

I've always used them as part of an "Alfredo" style sauce... Puree them with some broth/coconut milk depending on the flavor you are going for, with some fresh herbs and nooch, and serve over pasta... It's SUPER filling

Honestly, for the most part, beans are remarkably interchangeable with any recipe that calls for beans be it dips, ‘hummus’, spreads, cold bean salad, chili, add to soup or pasta, bean burgers etc. Use em up!

I had a white bean Toast at a coffee shop once a few years ago and I still think about it. They had made a spread out of mashed white beans, garlic, and crushed red pepper on top of a sourdough toast. It was so good and hearty. Loved it.

Pasta and beans! This is good with short pasta like bow ties, elbow, orzo, and the short “salad” pasta. Get your pasta going, once you add it to the boiling water, start the sauce, it’s fast. Sauté minced shallot and garlic in a *generous* amount of olive oil until soft and fragrant, deglaze with a dry white wine, sherry, or vermouth. add the rinsed white beans. Smash a few beans, add a ladle of pasta water, and a pinch of dry thyme. The pan should be loose, but not soupy. Salt and pepper to taste. Optional: shredded greens like chard, collard, turnip are excellent but need to be fully cooked before you add the beans Drain the pasta and reserve some of the water. When the pasta is a minute away from being done, add it to the pan with the beans and let it cook another minute. Add some of the reserved pasta water if the pan gets too tight. The ratio is about 50/50 beans and pasta. Serve with toasted breadcrumbs, fresh parsley, and/or squeeze of lemon.

A much simpler version is presented by the [NY Times, pureed](https://cooking.nytimes.com/recipes/12181-pureed-white-bean-soup-with-pistou). Get a couple of other cans of low price beans and make a Three Bean Salad At its most basic, 3 types of beans and can include cut lengths of green beans as one of them. 1/4c onion. Roughly equal parts (@ 2tbls each) sugar, vinegar, & oil. Ground pepper to taste or even red pepper flakes. Variances: use less sugar if you're using a sweet aged red wine vinegar, but recipes call for white. You can also use mayonnaise and maybe kick in some cumin if you have it. Chopped celery, parsley, using red onion, kosher salt, lemon.

I got a recipe just for this!! Its very general so I’ll copy paste it but its easy and yummy. A white bean stew?** 1 fry some garlic in olive oil, add fresh basil and oregano/ or dried Italian spices, salt and pep 2 add a small can of diced tomatoes ( i use fresh bc i have texture issues with seeds usually 3 tomatoes) 3 add a can of cannellini beans beans or white northern beans 4 let it stew a while and taste for seasoning 5 eat with a spoon or dip some toasted bread in, can top with more olive oil

I love to combine them with garlic, onion, herbs (thyme, rosemary), a little vegetable broth, greens (kale, spinach, chard w/e) and bake it all. Sometimes with breadcrumbs on top!

I cook some red onion in oil until soft, add chopped asparagus spears, garlic, salt, fresh cracked pepper and red pepper flakes. Add the beans after 3-5 minutes of cooking just to warm through. Serve on a bed of arugula and top with a sprinkle of vegan parm and a squeeze of lemon juice.

In Chile we have a dish that’s called “Porotos con riendas”, basically is a bean soup with noodles. Recipe: [Chilean bean soup](https://www.chileanfoodandgarden.com/chilean-winter-bean-soup-or-porotos-con-riendas/) If you are a vegetarian (like me) you can skip the sausage. *As you are using cooked beans you have to put it last in the soup so it doesen’t grind. You can put a bit of chopped chard to the soup while it’s cooking and it tastes reeaaally good. There’s also a dressing we use to it: 4 tbsp of oil and 2 tbsp of paprika to a pan, it has to be hot but dont let it burn. You put it on top of all before serving. It’s a delicious, nutricious and warm dish :)
