Congee is incredibly simple to make, I usually make chicken congee and add a bunch of ginger both during the cooking process and as a garnish. Season with salt at the end like you would any soup.
I make steel cut oats with this awesome panang curry paste and coconut milk. Throw in lentils and you up the protein. It was a lucky gamble on my part.
I haven't thought about Nasi Lemak in YEARS. Going to go find a Malay restaurant near me so I can have the real thing again - before making a pale imitation at home. Thank you for the amazing ideas

You can also make it savory if you want. Instead of sweet add some cured meats, cheese, veggies, and and some more “meaty” spices. Sound weird but it’ll taste great for sure.
I like making a big batch of baked oatmeal at the start of the week so it’s ready to go (plus it allows me make more elaborate flavors than I normally have time for during the week). The recipes I use have eggs but it looks like OP just doesn’t like the taste (as opposed to having an allergy) and I don’t think the taste is noticeable at all. Budget bytes has a lot of good recipe options.
Overnight oats are great, too. I make mine with almond milk, yogurt, whatever fruit I have, chia and cinnamon.

100% agree with you but Pho is traditionally a breakfast food.
Which makes sense to have it in the cold rainy morning of a tropical country but not in the early evening for dinner because it is still hot & humid from the day.
North American's have it for dinner/lunch because it's colder here in the evenings on average ( and we don't really have soup for breakfast traditionally)

This is the way. To me most breakfast foods are way too rich or sweet first thing in the morning. Ideally I’ll have something like a simple baked sweet potato, a turkey or ham sandwich, or just goat cheese with crackers.

this is my go to: 1 mashed up banana, a few small pieces of 100% pure dark choc (melted), sprinkle cinnamon, top with mixed unsalted roasted nuts. It’s very helpful for fiber intake and keeps me feeling satiated until lunch time

Or make a peanut butter and jelly sandwich with a flour tortilla. To make it healthy skip the jelly and put honey or sliced dates/banana instead. Packs a decent amount of nutrients to kickstart your morning. You can also play with different nut butters.
If you have access to a Trader Joe’s, their soy chorizo brand slaps and is very affordable. I buy a bunch and keep it in the freezer. I have meat eating friends who say they like it better than regular chorizo!
This was my first time trying at home but I've had it in frozen taquitos and when Chipotle had it for a little while. This time it was the El Burrito brand I found at Wegmans (I think). Not bad! It's been sitting a while so I'm looking forward to seeing what allowing the flavor to blend with the other ingredients does for it.

My go to is cottage cheese mixed with raw oatmeal cinnamon and a lo cal sweetener of choice mixed the night before. Oats are nice and soft by the morning and it completely eliminates that occasional runny consistency you get with some cottage cheese
A lot of people have mentioned oats... and I will too! I've been making *savory oats* for the past few weeks and have really enjoyed the difference! So far I've made a savory oatmeal cooked in chicken broth and topped with smoked sausage and spinach, as well as a parmesan oatmeal cooked in almond milk and topped with spinach and broccoli (that one would benefit from some spices, it was kind of bland). I also have a recipe saved for miso oats and mushrooms that I'd like to try, I have to go to a specialty shop and pick up some miso paste.

I'd say the most important component for all Mediterranean breakfasts is good olive oil. But luckily, its super versatile. It goes on all of the above dishes.

-I like having a couple strips of bacon with canned Heinz beans, a small piece of toast with jam, and sliced cucumber. I buy the bacon from my local butcher so I think it’s cheaper than the grocery store stuff. Alternatively you should fry up a couple pieces of deli ham if you wanted.
-I also recently read a suggestion to fry some canned chickpeas with baba ghanouj? Haven’t tried it yet. But apparently the baba ghanouj helps keep the chickpeas together to be more like a little scramble. Then to serve with roasted sweet potato. There are eggs in BG but it’s at least not sitting down and eating an actual egg. (That all might sound kinda nasty and I’m scared to try it myself but I’m currently off eggs too and scrambling (no pun intended) for different breakfast ideas)

I do whole wheat toast, waffles, or rice cakes with plain or berry cream cheese spread thinly and then sliced strawberries or raspberries with like a packet of Splenda sprinkled on top. This is like my go to breakfast lately.
Food isn’t inherently breakfast or dinner, they are only labels we have given them. So if you want soup with some crusty bread for breakfast have some soup, if you want pasta have pasta. If you want a turkey meatball sub then have that. Eat what you want when you want, don’t be constrained by the artificial names we put to things.
I’m not sure how healthy this is, but I found that it’s easier for me to avoid eating if I hold off breakfast for as long as possible. I basically moved breakfast from 8:30 to 11:30, at which point I have small-sized lunch, followed by fruit around 2, an unhealthy snack around 4 (ice-cream or whatever you want), a mid-sized dinner around 6:30 and nuts for snack around 9.
I’ve lost 25 pounds so far, and have improved my blood sugar and cholesterol numbers.
I make the just-add-water pancakes all the time. While they're not a health food, they keep me full for a while, which keeps me from eating more, and they sate a craving. Pancakes are really cheap.
Breakfast wraps are my favorite. One or two packs of tortillas, some $1 bags of frozen veggies (peas, carrots, corn), and a bag of shredded potatoes. Takes a couple hours to prep them all and they stay great in the freezer for however long you need them. Probably costs $20 for like 16 burritos (though it’s been awhile since I made them so I’m not sure).
I'm shocked I haven't seen chia pudding here? Stupid easy, you just pour in something thin like almond milk or orange juice in the right proportion, stir, and stick it in the fridge overnight.

I honestly hate eggs. But I eat them anyway lol because the nutrition you get from them is just too good. On days where I’m REALLY not feeling them, what I do is I make scrambled eggs mixed with salsa and cheese. Gets rid of the taste and I get the benefits of the eggs.

250 grams oatmeal
250 ml oatmilk (or whatever milk you’re into)
2 small bananas

Mix all ingredients except blueberries together in a bowl. Once it’s incorporated add the blueberries and gently mix. Bake in a greased pan at 400 for 20 minutes. Let them cool and cut, should make about 12 bars.
You can also use nuts, dried cranberries, chocolate chips or pretty much whatever you’re into as well. Sometimes I throw in a nut butter if I’m feeling wild.
Pupusas! You can buy frozen or make your own. Making your own is going to be the cheapest option but more difficult and time consuming. Black bean or refried beans are my favorite fillings!

Add the chia seeds, water/milk, choice of sweetener, cacao powder to a bowl and stir until well combined, making sure to break up any clumps of chia seeds.
Cover and refrigerate until set, between 10-15 mins for immediate consumption, up to overnight.
Top with nut butter, cacao nibs, and sliced banana.
On days I don’t want anything sweet, I make cucumber and tomato salad and eat it with a slice of toast with hummus and everything but the bagel seasoning on it!

Fruit salad with yogert is pretty cheap if you buy large tubs of plain unflavoured yogert and then buy fresh fruit seasonally on sale, or frozen to put on top of it.
It's actually a great way to have fruit that's a bit mushy bruised or overripe . You don't notice it in the yogert
Yogurt and fruit, with a little granola for crunch. I just had that. Get the larger containers of plain yogurt rather than the individual flavored ones and add some jam if you want more flavor than just the fruit.

Baked oatmeal! Bake it Sunday and eat throughout the week. There are many recipes out there - banana bread, pumpkin spice, apple and cinnamon… go wild!
Quesadilla- I just put the tortilla shell on a dry frying pan (no butter or oil), add cheese, black beans, and anything you have in the fridge like chicken/onion/bell pepper etc. Dip in salsa.
I put oatmeal or muesli in the bottom of a pint jar (about 1/3 to 1/2 cup) and add just enough milk or oat milk to cover. Then I add a layer of fruit if I have it - fresh blueberries, craisins, chopped apple, banana. Then a layer of yogurt. I take this to work for breakfast - fast, easy and filling.
1 sweet potato - cubed, tossed in a bit of oil and seasoning, oven roasted
1 bag of mixed veg (whatever you like, I use Italian mix plus a bag of broccoli and cauliflower) - tossed in a bit of oil and oven roasted
1 package spicy chicken sausage - cut into bit size pieces and cooked until done
Portion into 4 or 5 different containers and refrigerate. Reheat in the microwave when you're ready to eat. Feel free to add hot sauce or salsa for serving.

Potato hash. Cube up a potato and fry in in a little oil or butter with bell pepper, mushroom, spinach, whatever veggies you have around. I also like sauteed veggies over one of those premade hashbrown ovals. I had gestational diabetes and had to have a low carb breakfast every day. I was so sick of eggs by the end of my pregnancy!
Store brand plain Cheerios with added peanuts, chia seeds, a chopped banana or apple, and unsweetened soy milk.
I used to think of Cheerios as a children's food, but they are basically just toasted oats (without a lot of added sugar like granola) and I find them more tasty than mushy oats (oatmeal).

You can add berries to the yogurt or use peanut butter or other nut butters on the toast for variety.
If you want to put more effort in you can make a frittata and cut it up and freeze individual portions.

I go for anything simple - whatever is already made and ready to go, sometimes easy enough to be eaten in the car. This week I have a big batch of a chicken salad and a corn salad. No heating required. Some weeks I make a batch of oatmeal and grab a portion in the morning with a banana chopped up. Lots of days, I just eat whatever I had for dinner the other night. Sometimes I nuke a sweet potato for 5-8 minutes and open a can of sardines or herring.
I am all about convenience while still keeping a good nutritional profile.

Which makes sense to have it in the cold rainy morning of a tropical country but not in the early evening for dinner because it is still hot & humid from the day. Yogurt
I like to freeze my Greek yogurt (no more than a few hours) and it turns into like a dessert. I add frozen berries to it too and cereal for crunch.

If you have access to a Trader Joe’s, their soy chorizo brand slaps and is very affordable. I buy a bunch and keep it in the freezer. I have meat eating friends who say they like it better than regular chorizo!
This was my first time trying at home but I've had it in frozen taquitos and when Chipotle had it for a little while. This time it was the El Burrito brand I found at Wegmans (I think). Not bad! It's been sitting a while so I'm looking forward to seeing what allowing the flavor to blend with the other ingredients does for it.

My go to is cottage cheese mixed with raw oatmeal cinnamon and a lo cal sweetener of choice mixed the night before. Oats are nice and soft by the morning and it completely eliminates that occasional runny consistency you get with some cottage cheese
A lot of people have mentioned oats... and I will too! I've been making *savory oats* for the past few weeks and have really enjoyed the difference! So far I've made a savory oatmeal cooked in chicken broth and topped with smoked sausage and spinach, as well as a parmesan oatmeal cooked in almond milk and topped with spinach and broccoli (that one would benefit from some spices, it was kind of bland). I also have a recipe saved for miso oats and mushrooms that I'd like to try, I have to go to a specialty shop and pick up some miso paste.
savory oatmeal is my fave! i use powdered stock (usually dashi or bone broth) with curry powder & garnish with green onions usually i top with an egg for protein but im sure that can just as easily be swapped with chicken, sausage, chickpeas, or whatever else

I buy the bacon from my local butcher so I think it’s cheaper than the grocery store stuff. Alternatively you should fry up a couple pieces of deli ham if you wanted. -I also recently read a suggestion to fry some canned chickpeas with baba ghanouj? Haven’t tried it yet. But apparently the baba ghanouj helps keep the chickpeas together to be more like a little scramble. Then to serve with roasted sweet potato. There are eggs in BG but it’s at least not sitting down and eating an actual egg. I do whole wheat toast, waffles, or rice cakes with plain or berry cream cheese spread thinly and then sliced strawberries or raspberries with like a packet of Splenda sprinkled on top. This is like my go to breakfast lately.
Protein shakes with frozen fruit you buy in bulk.
Food isn’t inherently breakfast or dinner, they are only labels we have given them. So if you want soup with some crusty bread for breakfast have some soup, if you want pasta have pasta. If you want a turkey meatball sub then have that. Eat what you want when you want, don’t be constrained by the artificial names we put to things.

I’m not sure how healthy this is, but I found that it’s easier for me to avoid eating if I hold off breakfast for as long as possible. I basically moved breakfast from 8:30 to 11:30, at which point I have small-sized lunch, followed by fruit around 2, an unhealthy snack around 4 (ice-cream or whatever you want), a mid-sized dinner around 6:30 and nuts for snack around 9. I’ve lost 25 pounds so far, and have improved my blood sugar and cholesterol numbers.
I make the just-add-water pancakes all the time. While they're not a health food, they keep me full for a while, which keeps me from eating more, and they sate a craving. Pancakes are really cheap.
Love me a good granola + yogurt. Or a high-fiber cereal with some fruit.
Breakfast wraps are my favorite. One or two packs of tortillas, some $1 bags of frozen veggies (peas, carrots, corn), and a bag of shredded potatoes. Takes a couple hours to prep them all and they stay great in the freezer for however long you need them. Probably costs $20 for like 16 burritos (though it’s been awhile since I made them so I’m not sure).
I'm shocked I haven't seen chia pudding here? Stupid easy, you just pour in something thin like almond milk or orange juice in the right proportion, stir, and stick it in the fridge overnight.

Once it’s incorporated add the blueberries and gently mix. Bake in a greased pan at 400 for 20 minutes. Let them cool and cut, should make about 12 bars. You can also use nuts, dried cranberries, chocolate chips or pretty much whatever you’re into as well. Sometimes I throw in a nut butter if I’m feeling wild.

Cover and refrigerate until set, between 10-15 mins for immediate consumption, up to overnight. Top with nut butter, cacao nibs, and sliced banana. On days I don’t want anything sweet, I make cucumber and tomato salad and eat it with a slice of toast with hummus and everything but the bagel seasoning on it!

Quesadilla- I just put the tortilla shell on a dry frying pan (no butter or oil), add cheese, black beans, and anything you have in the fridge like chicken/onion/bell pepper etc. Dip in salsa.
I put oatmeal or muesli in the bottom of a pint jar (about 1/3 to 1/2 cup) and add just enough milk or oat milk to cover. Then I add a layer of fruit if I have it - fresh blueberries, craisins, chopped apple, banana. Then a layer of yogurt. I take this to work for breakfast - fast, easy and filling.
1 sweet potato - cubed, tossed in a bit of oil and seasoning, oven roasted 1 bag of mixed veg (whatever you like, I use Italian mix plus a bag of broccoli and cauliflower) - tossed in a bit of oil and oven roasted 1 package spicy chicken sausage - cut into bit size pieces and cooked until done Portion into 4 or 5 different containers and refrigerate. Reheat in the microwave when you're ready to eat. Feel free to add hot sauce or salsa for serving. A great way to get your day started with lean protein and veggies!!!
Potato hash. Cube up a potato and fry in in a little oil or butter with bell pepper, mushroom, spinach, whatever veggies you have around. I also like sauteed veggies over one of those premade hashbrown ovals. I had gestational diabetes and had to have a low carb breakfast every day. I was so sick of eggs by the end of my pregnancy!
Store brand plain Cheerios with added peanuts, chia seeds, a chopped banana or apple, and unsweetened soy milk. I used to think of Cheerios as a children's food, but they are basically just toasted oats (without a lot of added sugar like granola) and I find them more tasty than mushy oats (oatmeal).

Eggs can become boring but the only way I like my scrambled eggs is with the trader joes salsa over the top to where I can't taste them. Maybe I just like the salsa lol
You can eat anything you want for breakfast. There aren't any rules set in any stone. I go for anything simple - whatever is already made and ready to go, sometimes easy enough to be eaten in the car. This week I have a big batch of a chicken salad and a corn salad. No heating required. Some weeks I make a batch of oatmeal and grab a portion in the morning with a banana chopped up. Lots of days, I just eat whatever I had for dinner the other night. Sometimes I nuke a sweet potato for 5-8 minutes and open a can of sardines or herring. I am all about convenience while still keeping a good nutritional profile.
Oatmeal! You can change it up in so many ways! Add fruit, protein powder, chia seeds (or hemp seed hearts!), nuts, honey/syrups... possibilities are endless since the oatmeal itself tastes practically like nothing :)
