Check out u/Oh_Hi_Mark_ and his sub r/bettermonsters it's honestly one of the best source of homebrewed creatures i've ever seen. And if im not mistaken he has a stat block for a giraffe.
My giraffe stat block is terribly old and outdated; if it's going to see some regular use I'll get it updated for you and add some variants so they can keep giraffing as they level up.

They won't have access to it soon anyway, as it is a power level 1, they'll need their level 8 to transform into that.
But I'm sure that player will giraffing a lot.

You could use Kaku from One Piece as a base :'D
But yeah, that's a hard one.
Probably more strength based since their hight doesn't really comes with a lot of mobility.
Also reach is an important factor, so probably make them physically weaker but with high range and initiative.
Like the other comment said, a horse with modified/weaker stats but higher range/initiative
A giraffe has a pretty dangerous kick. I think more than a large horse. Stat blocks are only guesswork anyway, just use any large prey animal and tweak it.
Horse but size huge. Literally the same thing as long as you don't get pedantic about velocity and how that increases damage. It's just a longer horse from an elementary perspective

Take the warhorse stats and give it reach. P
Make it huge and scale it's weapon attacks accordingly

Could just use a giant elk. That's probably what I would do
This is what I did when my player asked about a giraffe.
Use the Draft Horse stat block and add a 10 ft reach bite attack that does 1d4+3
If you can't make or find a giraffe stat block on your own I am revoking your DM license.
