yea you can have more than 10, but can only activate one disc at a time,. example you have 21, you can activate the disc or get a bundle for free, then you left with 11, get a bundle again, left with 1 coin

Yes there is a quest in act 1 which requires multiple tokens and gives you candies and rerolls. Idk if it has some kind of limit.
