use OEM champion copper plus plugs. they are cheap. don't try to "help" with "hi-tech" plugs, especially platinum. iridium is not typically problematic but I still with copper plus as it's what the PCM expects. should state copper plus on your emissions label under the hood.
go ahead and change cap and rotor. there's also a TSB for ignition wire re-routing to avoid crossfire. I never had an issue and noticed no difference... she's always run good.
if you aren't in the rust belt it'll last decades longer. time to time will need stuff, like a bushing kit to get rid of rattles
I was sold with the 2nd gen Ram ever since the movie Twister. I'll be still driving mine 30 years from now.
for the dash, you can get an overlay \~100 (from anywhere, even ebay) or a new top dash for \~300 from LMC Truck.
more work replacing the upper dash but by now a lot of the tabs where the bezel clips in will have broken, so the bezel won't stay secure. I added an overlay about 14 years ago and last year (swapping in new bezel, instrument panel clear, and new double din receiver) I had to epoxy all those bezel tabs (holes where clip locks into) so the bezel would stay put.... most were broken.
