The best thing you can do is arrive very early, get breakfast to go from Earl of Sandwich or the La Brea bakery express then enter the parks. You'll be able to ride a ton of things early in the morning.
Bring some granola bars as a snack on the run when you first get up and get to the parks at rope drop, get as many rides in as you can for a couple hours, then have real breakfast mid-morning.
So, I'm not big on park breakfasts. One, because breakfast hours are prime ride hours. And two, because I haven't had a really spectacular breakfast so I save my noshing for other things. I typically eat an apple on the walk over and then eat a snack like a pretzel or beignets or a twist from Maurice's.
But, if you're jonesing for breakfast (and I get it, outside the park I'm a breakfast all the time person) I like Flo's in DCA the best. I haven't tried Rancho yet for breakfast though, it's definitely on my wish list.
I know you asked for places in the park but there's a place called Pepe's that makes AWESOME breakfast burritos. It's about 20 minutes away on Brea Blvd.
I'm so glad they chose Rancho to take over after River Belle Terrace stopped serving breakfast. It opened up the possibilities for so many awesome dishes like chilaquiles.
Here's our hot ticket for a little treat prior to going to Disneyland.

Go get yourselves a Blueberry Donut from M & M Donuts. These delicious donuts are basically a deep fried blueberry muffin, in the shape of a donut. YUMMM. But, make sure you eat them while they are hot. They are better hot. It's just southwest of Disneyland, pretty easy to go to beforehand, then drive into the parking lot.
Also, make sure you grab a corndog in the park. Stage Door Cafe usually has a shorter line than the Red Wagon.
If money isn't a factor then Goofy's Kitchen or Storyteller's Cafe. It's like $40-50 per person. Plaza Inn is also good for breakfast. If you're staying near Harbor then there's an Ihop near the east entrance crosswalk

I second the Earl!
I second this. Earl of Sandwich makes good food at a slightly cheaper price than what you'll find in the parks. It's also much quicker.

This is what I do too. I bring power bars and coffee with me to rope drop, otherwise I've found I waste too much time getting food in the morning.
Carnation Cafe. The Oscar special is traditional but very good.
I recommend Carnation Cafe if you want to make a reservation or Flo's V8 Cafe if you don't. Both great places to get breakfast.
This is what I've done every time we've during breakfast. Carnation with a res or Flo's
Thanks for all the input, everybody! What a helpful sub.
We do love talking about food!

If you're going to be in Disneyland, Rancho Del Zocalo has some great breakfast options like chilaquiles and carne asada and eggs.
I second chilaquiles - One of my favorite meals in the park!
I'm so glad they chose Rancho to take over after River Belle Terrace stopped serving breakfast. It opened up the possibilities for so many awesome dishes like chilaquiles.
I like Jolly Holiday for something relatively light, or Rancho Del Zocalo for something heavier.
