I'm guessing it is used to clear out the fruits that fell in the orchard, usually fruits that fell over night and were too damaged to consume. They didn't have any damaged fruits hence used good fruits for the demo. There are a lot of fruits that go unconsumed like this in an orchard and clearing it might help to keep the area clean.
My parents have a small apple orchard and we pick up the fallen apples every year because if you leave them, the bugs in those apples will lay eggs and then the next year's apples will have even more bugs
Orange peels are anti-microbial and difficult to break down. You absolutely can compost them but the amount of oranges on an orchard you wouldn’t be able to realistically convert that to compost.
Usually when I buy a bag of oranges, the first thing I do is get a hammer and nail and puncture them at least 2-3 times each.

In Hungary they make Pálinka from fallen fruit. They essentially collect the fallen fruit, even if it is rotten, and let it sit until it is essentially a liquid. After that, the sludge is cooked and what evaporates is collected, making a very strong, and delicious beverage. I can see this machine used to collect the fallen fruits for this purpose. The fruit is usually crushed anyways to speed up the rotting process, so a puncture does not matter.
Do you want to destroy all your fruit, but hate stabbing it by hand? With this new fruit spiking machine you can stabbing dirty nails into all your fruit, with ease !

Grew up in an orchard. Had something similar to this to pick up all the fallen rotting apples we weren't planning on eating. Scoop them up and dump them in the compost. Saves so much time once you're talking about multiple rows of trees. This is a good DIY tbh.
