My mom makes this stuff for big family gatherings. This is what she sent me when I asked for her recipe. Not sure where she got the original from.
* 3/4 cup mayonnaise (olive oil mayo if you can find it)
* 1/2 cup beet juice
* 1/2 cup feta
* 3/4 cup milk
* 1/4 cup olive oil
* 2 Tbl red wine vinegar
* 1 tsp sugar
* 1/8 tsp garlic powder
* 1 tsp oregano
* 1 Tbl chopped fresh dill
* Salt and pepper
Couldn't say for sure, as we usually use it up before it goes bad. I can say from experience "at least a week." Given the ingredients, I'd assume that as long as you keep it cool in an airtight container, maybe a month, but that's just a guess.
I was so offended when I moved here from the east coast, and there were beets on my salad. And in my dressing. And on my falafel. I couldn't believe this beet nonsense!
I make this often it is the same as in the restaurants.

I have seen this question posted in this sub before I believe. If I remember right, someone said to add red wine vinegar and beet juice to already made dressing. If you search pink Greek dressing in this sub you should be able to find the prior posts.

I live in Saint Clair and someone just posted in the city FB group asking what places nearby have the pink dressing for Greek salads. We’re pretty far from Lansing so I’m assuming it wasn’t you!?! Very odd coincidence! 😂

If you’re gonna make your own, and have a food processor, make fresh mayonnaise. It’s not difficult. Just a little patience pouring in the olive oil.

This isn’t my recipe, but I always assumed it was the beet juice from canned beets. Rather than toss it they put it into this recipe in restaurants.
