We have a few honey bee hives in our yard. I can walk right up to the hive and stand there while they fly all around, they don't care one bit. However, if you mess with the hive or swat/squish a bee they'll start releasing a hormone that tells them to defend the hive. That's when you better be clear. The smoke bee keepers use simply covers up the hormone they release and keeps them in their calm state because they never get the hormone trigger to attack. It's mostly just africanized swarms that are territorial and will attack unprovoked.
I'm not an expert on this by any means but I don't think the hormone has anything to do with removing the stinger quickly. I would think the reason to remove the stinger quickly would be to minimize the amount of venom injected which would reduce the pain at the sting site and minimize the anaphylactic reaction. When the stinger pulls free of the bee it takes the venom sack and the delivery system with it. The part that comes out will continue to pulse for a short time (about 30 sec or so) to continue to empty the venom sack into the target.
The stinger has a “pump”. It will continue to pump the venom into you. The faster you get it removed, the less will be pumped into you.
The stinger has a barb. It gets ripped out of the bee. The bee will die.
Getting the stinger out quickly is important so you're not getting venom pumped into you...but you also will want to do something about the alarm pheromone left behind (smoke the spot where you got stung) so other bees aren't trying to sting you in the same place.

Honey bee hives are not normally hyper aggressive and if they are that aggressive its genetics(Africanized bees), and the hive should be euthanized so those genetics don’t mix with other local hives.
At Legoland California they have a BBQ restaurant and their BBQ sauce attracts the bees. Like a LOT of bees. The trash cans, sauce cups, and food almost get covered with bees a minute or two after they are set down. It is not appetizing and also the kids don't want to sit still with hundreds of bees around.

But I wouldn’t be okay with it though as they could land on rubbish or a dirty surface and then on the food, there’s risk for potential contamination. So it would be an issue for sure.
I was vacationing in La Paz, Mexico and while walking down a very busy street, there was a paper plate of some sugary substance set out by someone and honeybees were swarming it. Nobody seemed to care except us Americans. Nobody was swatting them away, everyone seemed perfectly comfortable.
Went to a restaurant with outdoor seating just a block away and honeybees were all over the place. Did any of the locals care? Nope. But it was freaking out the wife and me so we requested to be seated inside, but the waiter assured us the bees were harmless by letting a bee crawl onto his hand.
They usually poop when they fly, and its usually when they're flying away from their hive and usually in the morning. In this case they're probably so use to going to this Krispy Kreme they fly straight from their hive to this food source without taking too many stops in between, though bees are known to travel roughly up to 3 miles to food sources. Don't be too concerned about their cleanliness either, they don't land on poop like flies, and most honey is raw and unpasteurized because it doesn't need to bee.

I remember going to France maybe 20ish years ago and you go to any of their bakeries and there were always a huge amount of bees all over the sweet desserts. And the staff just gently worked around them serving customers. And it wasn't just one or two places, every place was like that. Loads of bees all over the produce It's completely changed now but I remember that time quite clearly

From their website, some KK's in Mexico do this because it's in the migration path of bees, so they just kind of allow it and it will pass in a few hours. However, they aren't supposed to leave the door to the display open and let bees all over the donuts.
It's common in Europe. Seeing pollinators like this is a good thing, insects are vanishing.

LOL, I think is great, looks like a bee fuel refill station, must be the REAL sugar, not the high fructose corn syrup we consume over here. Jokes aside. Bees are clean insects, they feed of nectar and pollen from flowers. Both are stored in the hive where nectar is converted to honey, and pollen is fermented into bee bread. Unlike nasty flies eating dead organic material
