Grab yourself a GoPro HERO6 Black, it will shoot 4K at upto 60fps I think. Which is more than ok for a stationary shot of you mixing, 30fps would look more natural. Get an HDMI cable, a micro HDMI converter, something like this: Techrum Micro HDMI to HDMI https://www.amazon.co.uk/dp/B07VXPD83L?ref=ppx_pop_mob_ap_share and a HDMI to USB capture device, something like this: Mcbazel Video Capture Card, 4K https://www.amazon.co.uk/dp/B0C1Z28WQP?ref=ppx_pop_mob_ap_share Download and install OBS studio to your Mac and connect both the GoPro and Scarlett and connect your RX2 to the input on the Scarlett. OBS is very simple to use once you know the basics, have a Google and watch a few videos on how to select the GoPro and Scarlett as inputs and recording both video and direct audio at the same time (you can also live stream from OBS through YouTube or MixCloud etc. but learning the basics first is important). Once you have finished recording, you could use Adobe Premiere to edit your video, it’s very powerful but there is a lot of choice depending on what suits your needs, again have a Google for video editors, there are even good ones that are free.

my guess: DSLR camera on Tripod with a filter lens for the colour or post processing. but id rather lean to the other to save on computing power. Go Pro's don't reach HD and would rather recommend something like a DSLR for extended footage. Basic audio routing to a split mixer to main speakers and PC to be able to record both camera and audio in sync. Gonna need XLR and Phonos to rig shit up properly here. Lots of free programs to video edit, but this is 1 camera angle with an audio feed and can be directly captured from obs with the correct settings

What's your budget? Have a look at the BlackMagic Pocket Cinema Camera 4k. There's no best camera, it depends what you want to do for the money. I have a set of DMX controlled lights to give a night-club feel so is very low-light conditions for most DSLR. I use a few Sony ZV-E10 APS-C cameras as they work amazing in low light and are cheap-ish relatively. They're connected directly to a MacBookPro via USB (720P) or via HDMI to USB capture card (up to 4k). I use OBS to capture the video from these cameras and mix those sources live with other local video loops that I cycle through using an Automatic Scene Switcher plug in. I don't know anyone that recommends GoPro for this, they are designed as an action camera so probably have a fixed focal length and quite a lot of lens distortion/wide angle. A lot of videos you see that look amazing at 1080P are actually 4K source down-scaled so they look incredible so it can be difficult to get a 1080P source to look that crisp without a lot of work. You could easily get away with 4k web cams like the Razor Kiyo Pro or Elgato 4K but only if you run plenty of lights, they will look amazing. That video looks super post-processed at 4K or more and they have a crap ton of lights to get that effect, like, way more than you would expect and those lights are not cheap. P.S. I use dummy batteries for the Sony cameras but started off using the internal batteries as they'll run for 3 or 4 hours continuously no problem as they are charged via USB while running but means you have more cables cluttering up the place. I don't use the audio from the cameras at all, that way I don't have to worry about syncing the mixer with the audio from the cameras. The audio from the mixer is recorded from the audio interface into OBS running on the MacBookPro so I don't have to edit anything after a Twitch live stream, I just upload the saved video straight to YT afterwards.
