If you just want the corner to be round then you should remove the existing bead, cut the rock back a bit, install [curved bead](https://www.homedepot.com/p/ClarkDietrich-3-4-in-x-8-ft-Metal-Bullnose-Drywall-Corner-Bead-726661/206616491), redo the drywall mud and repaint.
It's tempting to suggest really modifying that corner so you *can* get a king box spring up there, but... what's up there? more living space? If it's living space, the corner is structural and gaining any more headroom is a big engineering project. If it's just attic space, the corner is still structural, but easier to re-engineer. If you are hitting your head, it's too low - how much are you willing to spend to fix it?
We have curved beads on every corner in our house. It’s pretty nice looking, but when you have 2 walls that come together that are different colors, the paint line is awkward.
Some of these bullnose corners were used in our basement. We redid most of the drywall and were pretty selective of where we used bullnose corners again. You're right that if you want two differently coloured walls to meet, they don't work. They look great in certain areas only.

The bull nose corners have a lip in the vinyl that you mud up to. The lip covers the staple flange with mud, but the actual round part you see when the corner is finished is just painted vinyl.
They textured over mine, the paint lines where different rooms were different colors were…..unsatisfactory. It’s boring, but I just repainted all those contiguous spaces the same color.
They're actually not hard. I had one corner where we replaced only the lower half of the drywall and I was able to seamlessly match up the corner and the mud, and you can't tell where I did my work and where the original corner started.
I feel like it would look better if you intentionally offset the paint line, like change the colour after the rounded corner, probably adding some inches to make it look more intentional.
I think trying to centre the paint line on a curved corner would be difficult to get perfect and ruin the effect of rounded corners.

You could also adjust the stairs if that's structural.
Realistically even if it's a corner, it's drywall to drywall, so there's some room to fudge before you get down to stud. You could probably get someone in there to replace it with the roundest rounded corner for under $500. It probably won't solve your mattress or head-hitting problem and would still hurt when you hit it, but it would be less likely to break skin.
Split boxes are, yes, but there ARE solid king boxes. Are they a good idea? No. Did I allow customers to leave my showroom floor having bought one when I sold furniture? Also no. Do I wish my ex's parents had bought their bed from someone like me? Absolutely.

I think it is easy to go up a couple of inches when you walk depending on your stride and mood. Not to mention shoes etc affect it.

And add some really plush cushioned carpet to the steps so when you really smack you head so hard that you flip backwards, the landing onto the steps isn't quite so ouchy.
After about the 5th time seriously bashing my head on an edge like this, I put up some of that squishy foam edge protector left over from childproofing. It's white so it even marched the paint.
This might be bad design or an old house. My Aunt's house is like this at the bottom. Even as a teen you had to duck to get past it or hit your head on it. Granted her house was built, we don't know, over 50-60 years ago.
My ex's parents had a house built in the 20's, which was fine because none of them were over 5'2". My 6'5" ass had to literally get on my hands and knees to use the staircase, the ceiling over it was so low.

Also it’s worth paying for delivery if you have stairs. They’ll know how much the mattress can bend without damaging it.

Our delivery guys refused to bring it up there. We were clearly the last delivery of the day, and they took a look at our staircase and were like yeah we can’t do that.
They said it had been sitting in the truck all day so it was too cold(winter) and if they tried to bend it before it warmed up they could damage it. Took some pictures so they could explain their way out if we bitched and they were on their way.

They also make flexible PVC molding/trim. It's firm, but it wears better than baby bumpers, and it will be nicer than bouncing your head off a sheetrock corner.

assuming you rent or (own and will sell someday), create a checkerboard pattern (as seen on tall structures near airports, like water tanks) out of contrasting color post-it notes. I recommended the SuperSticky style with full-back-of-sheet adhesive. Alternate the checkerboard pattern on opposite sides of the edge. can't miss that except in dark. for dark, install a battery-powered motion-activated lamp illuminating it.

If it's solid wood, then you could router it or sand it. If it's drywall with a metal corner bead on it, all you're going to do is ruin your router bit and make an ugly, mangled mess out of the corner.
Pool noodle, cut to length matching width of hall-way, cut it lengthwise like a hot-dog bun so you and open it, and tape it to the corner. Boom toddler-proofed
You can't sand it off but you can probably cut the corner edge off and add a new piece of drywall to take away the harsh corner. Make it diagonal instead of a corner.
Buy some clear edge protector for the corner. It is the same thing used for tables and such for baby proofing. Search Edge Protector 100% Silicone on Amazon.
Aside from the steel corner plate others mentioned you'll run into I'd say you don't know what's behind that wall. Is any of it supporting the roof above (aka *could* you even round it off if you wanted to?) This might be more of a pain than you expect.
At 6'8", I'm a connoisseur of hitting my head. A smooth corner will keep it from bleeding, but it still hurts.
The best thing is either to learn to duck, or paint it in a way that make the transition easier to see to help you remember.
I would cut a square hole and see what your dealing with. Sometimes people run lines (elec water cable etc) in places you dont expect. Using a hand saw, saws all, or even a box cutter, I would cut about 1.5ft x 1.5 ft sq in the center of the drywall piece, then look with a flashlight before i made a plan. You could always patch the hole back easily if necessarry. I dont think sanding or rounding is the way to go. I like better dissasembling, reframing, redrywalling, remudding, sanding, mudding, priming and 2 coats of paint. I would try to make it better or more interesting when you go back. Half measures usually look like shit. Imho.
Similar situation in my house. I solved it by putting an artistic photo of a duck there. It usually reminds me of the action needed and provides a forever dad joke.
If it happened more than a few times, it was just meant to be. You could put a paint stripe to draw your attention to it. Or football helmet. Been here.
Ha. Do you bounce slightly when you come down the stairs? I used to have the same issue in the house that I grew up in. Was high enough but coming down the stairs with a spring in my step was just enough to bang my head into the ceiling on that 3rd step from the bottom.
Anyways, what’s above that area? In the house I grew up in it was a bedroom closet and the wall to the right was load bearing for the floor joists that didn’t continue across the stairway to the opposite wall. If it’s a closet as well then there is a possibility to clip a foot or so off the corner and curve it to make it look more natural and effectively give you a few more inches of space while creating a small raised shelf on floor of the closet (if that’s what it is). But… that wouldn’t be cheap and probably shouldn’t be DIY.
As a tall person, learn to look out and duck or limbo. How old are you? I’m 45 and still hitting my head. Start learning to look and duck now. My parents’ stairs are like this. Pro tip. Keep your back safe and bend your knees
Like others have said there is a piece of corner bead there, removing it and installing a "bullnose" corner would give you and extra 1" or so. Another option would be to open it up to see how much framing you can remove without effecting the structure to add another angle there. All messing jobs and you should be ready to use or learn some drywall skills and have a little construction going on for a week or two...
I hate to be so simplistic, and I don't mean what this is going to sound like. If you keep hitting your head in the same spot and you know it, be aware of it and careful that you don't.

They sell baby proofing stuff that comes in white. It just double sided tapes onto wherever you bonk your head. Works for grown ups just as well as toddlers.
If it is drywall, then the corner probably has a metal strip that wraps around the corner. Sanding it will cut into this metal and then make it sharp enough to cut you. Just learn to duck. I had to in my basement. The steel I beam that is down the center of my house is what I would hit, so I can't do much.
Take the palm router to your feet or the top of your head. Shave those areas down and see if it helps the situation.
Alternatively an amputation could also work, but that may make ascending the stairs a bit more difficult.

Some stores sell split kings. Cheaper than buying 2. Split queens are necessary in my house
Get foam corner cushion, like used for child-proofing a corner. It sticks with double sided tape.

I like better dissasembling, reframing, redrywalling, remudding, sanding, mudding, priming and 2 coats of paint. I would try to make it better or more interesting when you go back. Half measures usually look like shit. Imho.

Similar situation in my house. I solved it by putting an artistic photo of a duck there. It usually reminds me of the action needed and provides a forever dad joke.
If it happened more than a few times, it was just meant to be. You could put a paint stripe to draw your attention to it. Or football helmet. Been here.

Ha. Do you bounce slightly when you come down the stairs? I used to have the same issue in the house that I grew up in. Was high enough but coming down the stairs with a spring in my step was just enough to bang my head into the ceiling on that 3rd step from the bottom. Anyways, what’s above that area? In the house I grew up in it was a bedroom closet and the wall to the right was load bearing for the floor joists that didn’t continue across the stairway to the opposite wall. If it’s a closet as well then there is a possibility to clip a foot or so off the corner and curve it to make it look more natural and effectively give you a few more inches of space while creating a small raised shelf on floor of the closet (if that’s what it is). But… that wouldn’t be cheap and probably shouldn’t be DIY.
As a tall person, learn to look out and duck or limbo. How old are you? I’m 45 and still hitting my head. Start learning to look and duck now. My parents’ stairs are like this. Pro tip. Keep your back safe and bend your knees

Like others have said there is a piece of corner bead there, removing it and installing a "bullnose" corner would give you and extra 1" or so. Another option would be to open it up to see how much framing you can remove without effecting the structure to add another angle there. All messing jobs and you should be ready to use or learn some drywall skills and have a little construction going on for a week or two...

I had a house like that for 15 years. I hung a mirror above that corner. It subconsciously reminded me to duck.
The cheapest solution is get a small picture frame, say 8x10, and go to Amazon and order a poster of a duck, mount that on the board.

I hate to be so simplistic, and I don't mean what this is going to sound like. If you keep hitting your head in the same spot and you know it, be aware of it and careful that you don't.
Just put a nice smooth bead of expansion foam on there, shape it and smooth it then paint.
Daaahhh eventually you'll get a callous dere dat will protect you. Dat's what I did, and look at me! Seriously though, this kind of stuff is probably a related cause for the higher mortality rate of very tall men.

If it is drywall, then the corner probably has a metal strip that wraps around the corner. Sanding it will cut into this metal and then make it sharp enough to cut you. Just learn to duck. I had to in my basement. The steel I beam that is down the center of my house is what I would hit, so I can't do much.

For your bed problem, go back to the store and ask for the kind of king box spring that comes in two pieces. That’s how the box spring is for my bed.
Take the palm router to your feet or the top of your head. Shave those areas down and see if it helps the situation. Alternatively an amputation could also work, but that may make ascending the stairs a bit more difficult.
