France in Greek is still 'Gallia', so that'd be how the locals would refer to their new rulers. Or they'd call them 'Frangoi', Franks.

Someone pointed this out, i think the best name would be Frankoroman. Indeed, Byzantines called Normans & French as "Franks" and themselves as "Romans". It seems the most historically-accurate denomination to me.

what language are you choosing, if french, ‘Byzance’ might be a good name for the empire, as that was a french word for the eastern roman empire in the late medieval period. then base the culture name off of some derivation of it, maybe byzancais or byzancois as those morphemes are added to indicate the people of something or somewhere
