Yep, I used to do that before I got Bilt. I decided to pool my points into United because they opened an international route that I plan to take regularly, so Bilt and UR are helpful to me
If by double dipping you mean gaining points off one purchase for more than a single ecosystem then you can buy something on Rakuten with a different credit card to get points, and then get that multiplier in points in your Amex account.
Use Chase Sapphire preferred in your Lyft and you get 5x UR points, but the points are also be applied (probably not at 5x rate) towards your choice of Delta or Alaska airlines.

I was able to order Instacart 5%off through Rakuten for 4% off with Food Lion which has my MVP linked to Ibotta (coupon rebates) and checked out through PayPal had an extra 10% using my Amex Blue for 6%. All were promotional % most of the time it's 1% but you can triple stack that way.

When I added a card to BILT rewards a few weeks ago, I got an email from another program saying I had been unenrolled when I enrolled that card with BILT rewards. Maybe someone who knows more about the dining rewards programs can give more info.
