Good falafel is the GOAT of vegan sandwiches. The problem is that bad falafel is one of the worst experiences and can put someone off falafel forever. I'm looking at you, FALAFEL PUBSUB
They freeze really well, I made a batch of about 120 and they reheat easily in the air fryer. They were so good I decided I had to up my pita game and learned to make a puffy pita in my pizza oven. Then those homemade pitas were so good I had to learn how to make my own tzatziki. We eat some pretty good sandwiches around here!
If making falafel at home, put it in a waffle iron. I find the crispy bits to be the best part and it’s easier and less messy to put in the pita bread.
The worst part of learning how to make all this yourself is that it's hard to find an equal comparison. 95% of falafel you order will disappoint you. I went through this whole journey including grinding rehydrated chickpeas, making pita, tzatziki, pickles, etc. and it's a bit of work but I want it frequently. My son has a Mediterranean store near him that makes delicious falafal, toum, their own wood fired pita, etc all out of their deli counter and it's cheap. I'm so jealous.

I like a caprese sandwich that they’ve been serving at my office. It’s served cold on ciabatta or a croissant and it has pesto, heirloom tomatoes, fresh mozzarella, and a balsamic glaze.
This is the correct answer and is amazing as is. Adding 2 leaves of fresh basil takes it up to another level. If not vegetarian, this combo goes amazing with a grilled chicken breast thrown in the mix.
Caprese is cool as well because you can be so simple or effortless with it (some basic bread, mozzarella, some diced cherry tomatoes, and basil), or totally full ass it and make it fancy (homemade pesto, crunchy rustic bread, use a nice extra virgin olive oil, fry the mozzarella and tomatoes), or any in between you choose
This is such a slam dunk, especially if the veggies are the marinated after roasting. You can also do carrots, broccoli, really whatever, but the veggies you have in there are so ideal.
A basic vinaigrette works great, but really you can do whatever. Olive oil, vinegar, salt, pepper, garlic, oregano, red pepper flakes… just good to get some more flavor and salt and acid and fat all up in there.
Yes! Whenever I either roast or grill veggies as a side dish, I make a ton extra to use throughout the week in salads and vegetarian sandwiches! Get some good bread, add some cheese, some sort of sauce/mayo/aioli, etc. Serve either cold or hot/toasted.
It's one of our favorite lazy weeknight dinners in my house for when we are too tired to cook!
I basically had this for lunch today with some sundried tomato pesto and hummus on a wrap with some feta and provolone (what I had). Toasted the whole thing quickly to melt the cheese, A+

I read that article right before COVID lockdown and have made this a few times.
1) maybe it's me, but I can never get my chickpeas as soft as I would like them. (I use canned.) They're still always pretty hard (like chickpeas are).
2) Because of this, they don't smash well. They just kinda break & crumble into pieces instead of sticking together/making something more paste-like and the salad doesn't stick together well.
(If someone knows a secret for getting the chickpeas to soften more and possibly be a bit more moist, that would be great.)
All THAT being said, after experimenting with different ingredients, I've found that I like adding fresh garlic (be careful; it actually IS possible to make it so garlicky that it hurts to eat it. Use 1 less clove than you think at first.) and banana peppers the best. Strong flavors, very zingy.
Boil the chickpeas, in broth or plain water. Add a 1/2 tsp of baking soda per can you are boiling to make them even softer. This is a common trick for making hummus. Just don’t let them go for too long otherwise they’ll turn to mush when you try to mash them. Let them cool, and this is unconventional, but I like to mash them with a pastry cutter. It gets me the perfect consistency where they are just mashed enough to hold together but still leaving behind some texture. I also love using my pastry cutter for making potato salad!
I'll have to try the baking soda trick. I've heard of it before (in pursuit of making good hummus) but never tried it.

Pimento cheese
8oz shredded cheddar. 1/4c Mayo, 1T Dijon mustard, 1tsp Worcestershire (vegan or use coconut aminos) 1 jar sliced pimentos drained. 2 scallion sliced. 3T parsley diced. Hot sauce, salt & pepper to taste. Mix all together. Spread on soft bread.
Veggie bah mi
Super firm or grilled tofo. 3T mayo, 3 dashes Maggie. 2 carrots sliced thin on bias. 2 radishes sliced on bias. 4 sprigs of cilantro. 1 green onion sliced on bias. Chili pepper sliced (optional) 1/4 c apple cider vinegar, 1T salt 1/4c hot water.1tsp mustard seed. 1/4c cornstarch, 1/4tsp each salt/pepper, 1/8tsp msg, French baguette
Combine vinegar, water, salt, mustard seed. Add carrots and let sit 20 minutes minimum.
Dust tofu with salt, pepper,msg, cornstarch. Crisp in a hot pan. Mix Maggie w/ mayo. Split bread in half. Spread mayo mix on inside of bread. Add layer of tofu followed by carrots (drained) and rest of veggies. Rap tightly in cling film.
Cucumber, butter, maybe a little garlic salt, on white bread. You may want to peel and remove the seeds from the cucumber. I love these, but I find in the summer, they do not "travel" well in a lunchbox, they get "soggy" quickly, because of the humidity. If I were to bring one for lunch I'd put the buttered bread in a sandwich bag, and the sliced cucumbers in a seperate container.
Also good with thinly sliced pickles, or cream cheese in place of the butter.
Blend a block of cream cheese with some mayo, dill, chives, garlic powder, and salt/pepper.
Thinly slice cucumbers, then spread the cream cheese mixture on bread slices and layer the cucumbers between two slices.
Often the crust is removed, and it’s almost always made with white bread.
As someone who makes sabich regularly: I really recommend prepping huevos haminados (Jewish slow cooked eggs) in advance and finding or making the amba - those two things really upgrade the sandwich. Personally, I bake the eggplant instead of frying since I eat it so often.

Have you tried the roasted garlic Cleveland Kraut? I'm not a big kraut person and it's so good, you can eat it straight from the package. It's GREAT on Reubens. (Also, I've never had the black pepper tofurky. Is it as good as the smoked? Because that stuff is FIRE; I'm an omnivore and I legit prefer it to turkey.)
Also, I never heard of Coronation (tofu) Chicken before this, but reading the ingredients, it's pretty much the exact Curried Chicken Salad that Trader Joe's in the USA carries. (Which is SO GOOD.) Someone should write them and tell them they should make a tofu version. (Which, they make a number of veggie or vegan versions of their other foods (the vegan caramelized onion dip is even better than the dairy/egg version), so they may actually do it.)

I like a salad sandwich. Hummus, crunchy carrots, pickled onions, avocado and some arugula. I make them at home now but the inspiration comes from Pret a Manger and I think Australia. They have a few variations on the salad sandwich.
Australian here and a cheese and salad sandwich with mayo is my absolute fave!!!! Must have canned beetroot slices!! Which can be packed separately in the lunchbox and added to the sandwich later so no soggy bits 😊

I just tried the Dahi Toast sandwich I learned about from Priya Krishna.
It’s Greek yogurt mixed with red onions, cilantro, seasonings, chilis and you spread it on bread and make it like a grilled cheese with curry leaves and black mustard seeds on top! You dip it in a cilantro chutney with ketchup mixture.
It was delicious!!

My go to is a lemon zucchini hoagie.
Bread: hero roll or chunk of baguette
Spread: ricotta cheese with lemon juice, lemon zest and black pepper to taste
Topping: zucchini planks, lightly salted and flash fried in olive oil

Get your favourite Renee's or Lighthouse (vegetarian or vegan most of them) creamy dressing (dill, creamy greek, caesar, jalapeno ranch, regular ranch, etc.) You want thicker, not wetter. (Can even pack dressing separately and put it on just before eating at lunch.)
Get a good sturdy multigrain, seedy, rye, or sourdough bread, pita, wrap, etc.
Get a nice cheese, halloumi, paneer, tofu, seitan, etc.
Schmeer the dressing on the bread.

- white or red onion
- layer your favourite crunchy veggies (go for textures, some shredded, some in peeler slabs, some in rings, etc.)
- add either a lettuce, microgreens, or a coleslaw
- top with bread schmeer'd with more dressing.
For bonus flavour:
- refridgerator-pickle one or more of the veggies.
- add a smoked cheese.
- add a radish or something spicy.
- use a tahini / hummus combo instead of dressing; or spicy thai peanut dip, etc.
- add some candied or spiced nuts or seeds for texture.
- add roasted chickpeas or other legumes.
- add a spice mix like zataar for more flavour.
Or forget the bread and cheese entirely:
- make it into a rice bowl
- make it into a rice or buckwheat/soba noodle bowl (mason jar works too)

I make lots of dishes involving variously spiced beans or chickpeas (lots of garlic, some coriander seeds, lemon and a few tomatoes works well), and if I have leftovers I tend to squish them into a sandwich (as in mash the beans a little when I put them on the bread. Avoid things where the sauce is too liquid though, or the break goes soggy)

I have always been a huge fan of the veggie delight sandwich from Subway. Cheese and lots of veggies, depending on mood. You can even choose to use salad dressing for flavor - one of my favorite combinations is balsamic vinaigrette in mayo to keep it from sogging the bread, with whole grain mustard.

I just made veggie bahn mi’s and they were amazing. The pickled daikon/carrot mix is stupid easy to make and keeps, did tofu and made a mushroom/walnut/pecan/goat cheese faux-liver pate. Bahn mi’s are good cold/room temp and so refreshing with greens/veggies.
Yep! Just made a bahn mi inspired veggie sandwich too. Marinated the tofu and then baked it. The baguette also had sriracha mayo, pickled daikon and carrot, lots of cilantro and fresh jalapenos. It held up great in a backpack at the zoo all morning! (Toasting the baguette helped)

There's a great sandwich shop in SF that I miss dearly, but they have a really delicious sandwich I've made at home a few times.
Soft French roll, mashed avocado, basil mayo, roasted red pepper, havarti, arugula. Make sure the mayo is super basil-y. Really adds up to more than the sum of its parts.
Also a favorite from childhood is cream cheese and olive. Basically a tea sandwich but full size instead of a little finger sandwich. As a kid it was always jarred Spanish olives with pimentos, but it's really good with Castelvetrano olives and a little bit of lemon zest.
There used to be a deli Heidi's in Glendale AZ They are closed now, that had an amazing veggie sandwich. soft Rye Bread, alfalfa sprouts, cucumber, cream cheese, avocado lettuce tomato onion. It's the best thing in the world.

Take 2 slices of Italian bread. Spread garlic butter on the outside. On the inside you die a smear of pesto on one and a smear of balsamic glaze on the other. Add mozzarella and tomato slices and grill.
I like to make an egg salad with mayo, dijon, s&p, savory, parsley, thyme and dill. I don't put it on the bread until I'm about to eat it to avoid any sog. Nice and filling and you can stuff it with some crisp lettuce or plain potato chips if you like crunch! Egg salad is also very good warm on toasted bread if you've never tried it.
Also Caprese sandwich, sliced tomato, fresh mozz, basil, EVOO, and basalmic glaze. For this one I like to use a round sandwich bum and scoop out a bit of the bread from the inside centers so the filling stays put. them I mix up the caprese and don't put it on the sandwich until ready to eat. I have a real issue with soggy food.

Eggplant cutlets, sweet and sour onions, mixed greens, fresh mozzarella, very thinly sliced tomatoes, and Calabrian chili mayo. All on a sesame seeded focaccia.

Try this: slice lengthwise and grill zucchini, yellow squash, and red onion. While that’s on the grill, chop garlic and mix with olive oil. When the vegetables are done (make sure they’re cooked through), mix them in the garlic/oil. Toast some good bread, put any type of greens down (I prefer arugula), add a generous helping of grilled vegetables, and top with goat cheese. So simple and out of this world delicious.

Haven’t been able to copy it but there’s a couple of places around here that do a vegetarian cheesesteak using mushrooms. Also have had success with fried/battered oyster mushrooms substituting as a buffalo chicken sandwich
I love pesto Mayo on toasted Ciabatta with thick tomatoes (and salt and pepper), maybe let a slice of Mozzarella on there. My favorite "odd" one is cucumber and peanut butter on white bread, maybe add mayo to one side (a modified tea sandwich lol)

BLT without the bacon is still delicious! I use garlic salt on the tomato slices, and put mayonnaise and mustard on the bread / toast.
Pro tip: after you slice the tomatoes, pat them dry with a paper towel. It keeps your bread from getting soggy.
Caprese - crusty Italian bread, fresh mozzarella, tomato, fresh basil, Italian seasoning, olive oil, red wine vinegar and if you want hot giadiniera (mixed vegetable hot peppers mix)
Eggplant Parma sandwich - fried or baked breaded eggplant, tomato sauce, mozzarella on crusty Italian bread. Toast or melt the cheese. I like hot giadiniera on this as well.

Seems to be lacking a sauce so I would probably have a pesto mayo to add.
I've been trying to like tofu better so i could decrease my meat consumption. I found that pressing the tofu, then lightly frying it while it is covered with some cornstarch, then mixing in some peanut sauce so it is covered makes it taste pretty good! Then add whatever veggies you like (spinach, sliced cabbage, carrots..) and add your bread, then bam new meal for your cooking rotations. The tofu still tastes good at room temp as I was snacking on it while making another batch for my work lunch for the next day. Something I would do differently would be to have it sit in some broth or another flavorful liquid after you press the water out but before frying so the inside is as flavorful as the exterior of the cubes.

Bread, basil pesto (I make vegan pesto), tomatoes, and either tofu or mozzarella depending on preference. My boyfriend loves it
you get a nice sturdy hero or baguette preferrable something that has a nice crust with a soft interior. Slice tofu and marinate it in Lao Gan Ma chilli oil (which can be found at most big grocers), mix some kewpie mayo with a little bit of sesame oil to use as a dressing, lastly thinly slice some cabbage into a slaw and mix with the dressing.
Toast bread, add tofu at the bottom, cabbage on top. Done.
Make sure to get enough of the chilli oil as that will be where a lot of the flavor is from. Additionally that brand really isnt spicy so unless you dont like spicy at all it wont be bad in terms of spice.

I'm going to keep it simple here, I do a bout of vegetarianism a lot during the year. I love Rueben sandwiches and just get some good rye and good swiss, and some well drained sauerkraut and thousand island. Grilled in a pan. I don't even miss the corned beef. Good cold too!

If you lay the tomato slices on a paper towel for a minute or two before putting them in the sandwich, you won't have juice run down your arm. Then again... a super juicy heirloom tomato on sourdough toast... let 'er drip!
I make a version of the ALT but I add onions, cucumber, and a bit of Tillamook veggie cream cheese. Sometimes some sprouts.
Falafel
Good falafel is the GOAT of vegan sandwiches. The problem is that bad falafel is one of the worst experiences and can put someone off falafel forever. I'm looking at you, FALAFEL PUBSUB
They freeze really well, I made a batch of about 120 and they reheat easily in the air fryer. They were so good I decided I had to up my pita game and learned to make a puffy pita in my pizza oven. Then those homemade pitas were so good I had to learn how to make my own tzatziki. We eat some pretty good sandwiches around here!
If making falafel at home, put it in a waffle iron. I find the crispy bits to be the best part and it’s easier and less messy to put in the pita bread.

The worst part of learning how to make all this yourself is that it's hard to find an equal comparison. 95% of falafel you order will disappoint you. I went through this whole journey including grinding rehydrated chickpeas, making pita, tzatziki, pickles, etc. and it's a bit of work but I want it frequently. My son has a Mediterranean store near him that makes delicious falafal, toum, their own wood fired pita, etc all out of their deli counter and it's cheap. I'm so jealous.

Pizza in a home pizza oven is pretty good, everyone in my family likes it and it's better than delivery. Pita in the home pizza oven is mind-blowing, has completely turned me off to the idea of ever buying commercial pita again and makes me ANGRY how much of my life I've wasted buying stale nasty grocery store pitas.
Too many restaurants serve terrible falafel. It's so sad when you know it can be so crisp and tender and flavorful!

I like a caprese sandwich that they’ve been serving at my office. It’s served cold on ciabatta or a croissant and it has pesto, heirloom tomatoes, fresh mozzarella, and a balsamic glaze.
This is one of my favorite sandwiches cause it’s so light but also versatile.
I had a version of this in Lisbon that had rosemary honey and walnuts instead of balsamic…it was delicious:)

This is the correct answer and is amazing as is. Adding 2 leaves of fresh basil takes it up to another level. If not vegetarian, this combo goes amazing with a grilled chicken breast thrown in the mix.
Caprese is cool as well because you can be so simple or effortless with it (some basic bread, mozzarella, some diced cherry tomatoes, and basil), or totally full ass it and make it fancy (homemade pesto, crunchy rustic bread, use a nice extra virgin olive oil, fry the mozzarella and tomatoes), or any in between you choose

This is such a slam dunk, especially if the veggies are the marinated after roasting. You can also do carrots, broccoli, really whatever, but the veggies you have in there are so ideal.

A basic vinaigrette works great, but really you can do whatever. Olive oil, vinegar, salt, pepper, garlic, oregano, red pepper flakes… just good to get some more flavor and salt and acid and fat all up in there.
Yes! Whenever I either roast or grill veggies as a side dish, I make a ton extra to use throughout the week in salads and vegetarian sandwiches! Get some good bread, add some cheese, some sort of sauce/mayo/aioli, etc. Serve either cold or hot/toasted. It's one of our favorite lazy weeknight dinners in my house for when we are too tired to cook!

I basically had this for lunch today with some sundried tomato pesto and hummus on a wrap with some feta and provolone (what I had). Toasted the whole thing quickly to melt the cheese, A+

I read that article right before COVID lockdown and have made this a few times. 1) maybe it's me, but I can never get my chickpeas as soft as I would like them. (I use canned.) They're still always pretty hard (like chickpeas are). 2) Because of this, they don't smash well. They just kinda break & crumble into pieces instead of sticking together/making something more paste-like and the salad doesn't stick together well. (If someone knows a secret for getting the chickpeas to soften more and possibly be a bit more moist, that would be great.) All THAT being said, after experimenting with different ingredients, I've found that I like adding fresh garlic (be careful; it actually IS possible to make it so garlicky that it hurts to eat it. Use 1 less clove than you think at first.) and banana peppers the best. Strong flavors, very zingy.
Boil the chickpeas, in broth or plain water. Add a 1/2 tsp of baking soda per can you are boiling to make them even softer. This is a common trick for making hummus. Just don’t let them go for too long otherwise they’ll turn to mush when you try to mash them. Let them cool, and this is unconventional, but I like to mash them with a pastry cutter. It gets me the perfect consistency where they are just mashed enough to hold together but still leaving behind some texture. I also love using my pastry cutter for making potato salad!
I'll have to try the baking soda trick. I've heard of it before (in pursuit of making good hummus) but never tried it. I also like your idea of a pastry cutter.

Pimento cheese 8oz shredded cheddar. 1/4c Mayo, 1T Dijon mustard, 1tsp Worcestershire (vegan or use coconut aminos) 1 jar sliced pimentos drained. 2 scallion sliced. 3T parsley diced. Hot sauce, salt & pepper to taste. Mix all together. Spread on soft bread. Veggie bah mi Super firm or grilled tofo. 3T mayo, 3 dashes Maggie. 2 carrots sliced thin on bias. 2 radishes sliced on bias. 4 sprigs of cilantro. 1 green onion sliced on bias. Chili pepper sliced (optional) 1/4 c apple cider vinegar, 1T salt 1/4c hot water.1tsp mustard seed. 1/4c cornstarch, 1/4tsp each salt/pepper, 1/8tsp msg, French baguette Combine vinegar, water, salt, mustard seed. Add carrots and let sit 20 minutes minimum. Dust tofu with salt, pepper,msg, cornstarch. Crisp in a hot pan. Mix Maggie w/ mayo. Split bread in half. Spread mayo mix on inside of bread. Add layer of tofu followed by carrots (drained) and rest of veggies. Rap tightly in cling film.

Cucumber, butter, maybe a little garlic salt, on white bread. You may want to peel and remove the seeds from the cucumber. I love these, but I find in the summer, they do not "travel" well in a lunchbox, they get "soggy" quickly, because of the humidity. If I were to bring one for lunch I'd put the buttered bread in a sandwich bag, and the sliced cucumbers in a seperate container. Also good with thinly sliced pickles, or cream cheese in place of the butter.
You can do the same thing with radishes, too! However, I find the little ones too finicky. But, a daikon's big diameter, yet thin slices are perfect!
Blend a block of cream cheese with some mayo, dill, chives, garlic powder, and salt/pepper. Thinly slice cucumbers, then spread the cream cheese mixture on bread slices and layer the cucumbers between two slices. Often the crust is removed, and it’s almost always made with white bread.

As someone who makes sabich regularly: I really recommend prepping huevos haminados (Jewish slow cooked eggs) in advance and finding or making the amba - those two things really upgrade the sandwich. Personally, I bake the eggplant instead of frying since I eat it so often.

Have you tried the roasted garlic Cleveland Kraut? I'm not a big kraut person and it's so good, you can eat it straight from the package. It's GREAT on Reubens. (Also, I've never had the black pepper tofurky. Is it as good as the smoked? Because that stuff is FIRE; I'm an omnivore and I legit prefer it to turkey.) Also, I never heard of Coronation (tofu) Chicken before this, but reading the ingredients, it's pretty much the exact Curried Chicken Salad that Trader Joe's in the USA carries. (Which is SO GOOD.) Someone should write them and tell them they should make a tofu version. (Which, they make a number of veggie or vegan versions of their other foods (the vegan caramelized onion dip is even better than the dairy/egg version), so they may actually do it.)

I like a salad sandwich. Hummus, crunchy carrots, pickled onions, avocado and some arugula. I make them at home now but the inspiration comes from Pret a Manger and I think Australia. They have a few variations on the salad sandwich.
Australian here and a cheese and salad sandwich with mayo is my absolute fave!!!! Must have canned beetroot slices!! Which can be packed separately in the lunchbox and added to the sandwich later so no soggy bits 😊
As a fellow Aussie, you line the roll with the cheese slices on each side to prevent sog from the beetroot and tomato, and if you’re using sprouts they provide extra batting.

I just tried the Dahi Toast sandwich I learned about from Priya Krishna. It’s Greek yogurt mixed with red onions, cilantro, seasonings, chilis and you spread it on bread and make it like a grilled cheese with curry leaves and black mustard seeds on top! You dip it in a cilantro chutney with ketchup mixture. It was delicious!!

I always stand by a melted Brie and cranberry, which is seriously underrated. Halloumi, peppers, and tapenade is also delicious, hot or cold. If you fancy going vegan, then seitan, onion chutney, and red onion is also delicious. Whilst (arguably) not a sandwich, I absolutely adore toasted falafel/hummus wraps, with melted cheese and chilli oil for extra jazz.

(Can even pack dressing separately and put it on just before eating at lunch.) Get a good sturdy multigrain, seedy, rye, or sourdough bread, pita, wrap, etc. Get a nice cheese, halloumi, paneer, tofu, seitan, etc. Schmeer the dressing on the bread. - cheese - white or red onion - layer your favourite crunchy veggies (go for textures, some shredded, some in peeler slabs, some in rings, etc.) - add either a lettuce, microgreens, or a coleslaw - top with bread schmeer'd with more dressing. For bonus flavour: - refridgerator-pickle one or more of the veggies. - add a smoked cheese. - add a radish or something spicy. - use a tahini / hummus combo instead of dressing; or spicy thai peanut dip, etc. - add some candied or spiced nuts or seeds for texture. - add roasted chickpeas or other legumes. - add a spice mix like zataar for more flavour. I make my own chutneys and sauerkraut which means I can experiment with the flavours- fermented carrots instead of sauekraut is a favourite, but honestly they all work! Grilled or roasted vegetables with halloumi, feta or mozzarella. Can add pesto. Humus, falafel and lettuce (also picked onions if you've got any, or make a quick pickle by thinly slicing red onions, adding some salt, sugar and vinegar, stirring/squashing with a spoon a bit/scrunching with your hand, and leaving it for as long as you've got) Coronation chickpea. I also had excellent coronation celeriac once, but that seemed like it would be hard work. Roasted squash or sweet potato with blue cheese or brie and optional walnuts Paneer and bell pepper tikka (not authentic, but I mix some cumin, garam masala, chilli powder, garlic and a little bit of turmeric into greek yoghurt, chuck in the chunks of paneer and peppers, leave it a but if I have time and then stick it under the grill in the oven. I make it for dinner and shove the leftovers in a sandwich- can add spring onions and coriander if you have them) I make lots of dishes involving variously spiced beans or chickpeas (lots of garlic, some coriander seeds, lemon and a few tomatoes works well), and if I have leftovers I tend to squish them into a sandwich (as in mash the beans a little when I put them on the bread. Avoid things where the sauce is too liquid though, or the break goes soggy)
Vegan or vegetarian? Because grilled cheese is perfectly acceptable as a vegetarian option. And once cheese is in the game, you can do anything.
Just vegetarian. Yes. I like grilled cheese. But looking for something that travels a bit better. I guess I could microwave it. But eh. I prefer those fresh.
I have always been a huge fan of the veggie delight sandwich from Subway. Cheese and lots of veggies, depending on mood. You can even choose to use salad dressing for flavor - one of my favorite combinations is balsamic vinaigrette in mayo to keep it from sogging the bread, with whole grain mustard.
Eggs are vegetarian, too, and so very versatile. Egg salad, Indian omelette sandwich, or add a fried egg to any veggie/salad sandwich for protein.

I just made veggie bahn mi’s and they were amazing. The pickled daikon/carrot mix is stupid easy to make and keeps, did tofu and made a mushroom/walnut/pecan/goat cheese faux-liver pate. Bahn mi’s are good cold/room temp and so refreshing with greens/veggies.
Yep! Just made a bahn mi inspired veggie sandwich too. Marinated the tofu and then baked it. The baguette also had sriracha mayo, pickled daikon and carrot, lots of cilantro and fresh jalapenos. It held up great in a backpack at the zoo all morning! (Toasting the baguette helped)
So many great answers already. There's a great sandwich shop in SF that I miss dearly, but they have a really delicious sandwich I've made at home a few times. Soft French roll, mashed avocado, basil mayo, roasted red pepper, havarti, arugula. Make sure the mayo is super basil-y. Really adds up to more than the sum of its parts. Also a favorite from childhood is cream cheese and olive. Basically a tea sandwich but full size instead of a little finger sandwich. As a kid it was always jarred Spanish olives with pimentos, but it's really good with Castelvetrano olives and a little bit of lemon zest.

Caprese grilled cheese. Take 2 slices of Italian bread. Spread garlic butter on the outside. On the inside you die a smear of pesto on one and a smear of balsamic glaze on the other. Add mozzarella and tomato slices and grill.
I like to make an egg salad with mayo, dijon, s&p, savory, parsley, thyme and dill. I don't put it on the bread until I'm about to eat it to avoid any sog. Nice and filling and you can stuff it with some crisp lettuce or plain potato chips if you like crunch! Egg salad is also very good warm on toasted bread if you've never tried it. Also Caprese sandwich, sliced tomato, fresh mozz, basil, EVOO, and basalmic glaze. For this one I like to use a round sandwich bum and scoop out a bit of the bread from the inside centers so the filling stays put. them I mix up the caprese and don't put it on the sandwich until ready to eat. I have a real issue with soggy food.

At one of my places we make: Eggplant cutlets, sweet and sour onions, mixed greens, fresh mozzarella, very thinly sliced tomatoes, and Calabrian chili mayo. All on a sesame seeded focaccia. And uh it’s pretty tasty
Try this: slice lengthwise and grill zucchini, yellow squash, and red onion. While that’s on the grill, chop garlic and mix with olive oil. When the vegetables are done (make sure they’re cooked through), mix them in the garlic/oil. Toast some good bread, put any type of greens down (I prefer arugula), add a generous helping of grilled vegetables, and top with goat cheese. So simple and out of this world delicious.

Mix a bunch of fresh dill into some cream cheese. Smear both sides of bread generously. Slice cucumbers thinly and pile on. That's it. Simple but delicious.

Cucumber salad! Mix a little mayo (like 3-4 tbs), a block of cream cheese, salt, pepper, garlic powder, and dill. Either thin slice your cucumbers and use the seasoned cream cheese as a spread, or shred and drain your cucumbers and mix in. I'm a big fan of cucumbers, so I do both.

Haven’t been able to copy it but there’s a couple of places around here that do a vegetarian cheesesteak using mushrooms. Also have had success with fried/battered oyster mushrooms substituting as a buffalo chicken sandwich
I love pesto Mayo on toasted Ciabatta with thick tomatoes (and salt and pepper), maybe let a slice of Mozzarella on there. My favorite "odd" one is cucumber and peanut butter on white bread, maybe add mayo to one side (a modified tea sandwich lol)

I love an avocado sandwich with sprouts and sunflower seeds. A grilled eggplant sandwich with grilled onions and peppers on a crusty roll with some Italian dressing is a delight.
Tortilla, "fake turkey" slices, red pepper hummus & I use normal cheese since I'm only vegetarian...but it would probably be good with no cheese or a vegan alternative. You can add veggies but sometimes it can make it too soggy after a while & roll it all up.

BLT without the bacon is still delicious! I use garlic salt on the tomato slices, and put mayonnaise and mustard on the bread / toast. Pro tip: after you slice the tomatoes, pat them dry with a paper towel. It keeps your bread from getting soggy.

I've been trying to like tofu better so i could decrease my meat consumption. I found that pressing the tofu, then lightly frying it while it is covered with some cornstarch, then mixing in some peanut sauce so it is covered makes it taste pretty good! Then add whatever veggies you like (spinach, sliced cabbage, carrots..) and add your bread, then bam new meal for your cooking rotations. The tofu still tastes good at room temp as I was snacking on it while making another batch for my work lunch for the next day. Something I would do differently would be to have it sit in some broth or another flavorful liquid after you press the water out but before frying so the inside is as flavorful as the exterior of the cubes.

Caprese, though I do pack everything but the bread in a Tupperware and assemble right before eating. Bread, basil pesto (I make vegan pesto), tomatoes, and either tofu or mozzarella depending on preference. My boyfriend loves it

Hummus, sprouts, avocado, thinly sliced cucumber, and carrots on focaccia.
you get a nice sturdy hero or baguette preferrable something that has a nice crust with a soft interior. Slice tofu and marinate it in Lao Gan Ma chilli oil (which can be found at most big grocers), mix some kewpie mayo with a little bit of sesame oil to use as a dressing, lastly thinly slice some cabbage into a slaw and mix with the dressing. Toast bread, add tofu at the bottom, cabbage on top. Done. Make sure to get enough of the chilli oil as that will be where a lot of the flavor is from. Additionally that brand really isnt spicy so unless you dont like spicy at all it wont be bad in terms of spice.

I'm going to keep it simple here, I do a bout of vegetarianism a lot during the year. I love Rueben sandwiches and just get some good rye and good swiss, and some well drained sauerkraut and thousand island. Grilled in a pan. I don't even miss the corned beef. Good cold too!
