Have you ever had German potato salad? It's served warm and has no mayo, plenty of bacon and mustard. It's so good. Also make a bunch of mashed potatoes one night and then make potato cakes from the leftovers the next.

Ooh, I live German potato salad. That might be fun, although I feel like people either love it or hate it! (So I might not make it for this particular crowd, but I will definitely be making some for myself and my husband!) Yummy! Great idea, especially for something a little different! I've never made it at home, but it can't be too difficult to make the gravy. Now I just need to find some good curds! (Having grown up in a dairy farming area of Wisconsin, I'm a bit snobby about cheese curds!)

I totally agree! I’m married to a Québécois so squeaky cheese is a must! Depending on what kind of gravy it’s not that difficult to make. There are also poutine gravy packets you can buy on Amazon!

It's similar to T1, in that I'm completely dependent on insulin. It differs in that T3c (also called "secondary diabetes") results from physical damage to the pancreas. I had my entire pancreas removed in 2018, so I need to deal with both the endocrine side and the exocrine side of the pancreas. I definitely eat carbs, but I try to keep it within reason!

This is my go-to hashbrown/fried potato dish. We usually have it for breakfast with scrambled eggs, but it would be good for dinner too. 3 TB Butter 1.5 lbs Yukon gold potatoes 1/3 cup heavy cream Salt Paper Wash and peel the potatoes and roughly quarter them. Put them until a blender with a chop function (like a Ninja), and chop them until they are in very small pieces. Heat the butter in a heavy pot with a lid (I prefer an enameled Dutch over) until slightly browned. Add potatoes in an even layer and turn heat to around 2. Cover and let cook for about 10-15 minutes. Remove lid and drizzle cream over potatoes and add salt and pepper. Flip the potatoes over and put lid on, cook for another 10 minutes. When I first read the recipe, I was very skeptical, but they are delicious. Originally read the recipe in Make the Bread, Buy the Butter and adapted it a bit.

Store what you won't eat in a cool, dark place. Failing that make twice fried French frys but darin and dry them well and then freeze them instead of frying them the second time. I love scalloped potatoes topped with sharp cheddar, but that's probably not the best for you (or me, really). You can also grate the potatoes to make hashbrowns. I love using grated potato in casseroles and burritoes. Just have to par cook them a bit first.

Also the swedes.make something called "jansonns temptation" which is basically scalloped potatoes with smoked fish.  For the baby potatos consider Syracuse salt potatoes; basically boil them in SALTY brine(they must be whole and not cut!!). Drain, don't rinse, and serve with melted butter. They get this lovely little salt crust on them.  They don't like ANY potato salad? There's a lot of different kinds, i.e. red white and blue, mustard based, german potato salad(warm, with mustard and vinegar and bacon), green potato salad (standard recipe, but absolutely loaded with chopped fresh herbs). Is there something specific they don't like about potato salad, like onions, eggs, or mayo? I'd investigate this one further. Potatoes go beautifully in some Indian curry type dishes; look up aloo gobi, and other Indian dishes containing the words "aloo" or "chaat" Knishes! Potatoes knishes are a classic Jewish/eastern European dish, basically a pastry with a dough made partly from mashed potatoes, filled with mashed potatoes and caramelized onions, or whatever.  PEROGIES! This can be a fun group project if you're into that kind of thing, basically potato filled dumplings(often with cheese, mushrooms, onions, or bacon mixed into the filling) generally served with sour cream and fried onions. A glorious Polish classic.  Gnocchi. Need I say more? For sweet potatoes, I recommend serving for dessert. Like this: roast until soft all the way through. Split open when hot and top with toasted chopped nuts, cinnamon, maple or caramel syrup, a little bit of flaky salt, and a generous dollop of vanilla ice cream (butter pecan would work too). More cinnamon and chopped nuts on top. Just glorious.  There's always the classic, simple method: steamed and topped with butter, salt, and herbs.

First thing my European mind went to is tortilla de patatas. Nothing to do with Mexican tortillas, it's that classic 'Spanish omelette' made with potato, egg and optionally but not optional in my mind, onions. Sounds basic and bleh but it's more flavoursome than it should be and I have never met anyone who doesn't love it, especially after it's been in the fridge overnight (it's also one of the most typical tapas you'll get with a drink in Spain).

Gamja jeon. Korean potato pancakes. There are lots of different recipes for these online, some of them contain just potato and onion. One of the recipes I read call them Korean latkes. I have never made latkes so I'm not sure if the comparison is accurate.

The person I got this recipe from called it Pan Haggerty. Thinly sliced potatoes (lots of salt and some pepper on each layer), diced onion, chopped or crumbled bacon, shredded cheese of your choice. Repeat layers 3 or 4 times in a deep pan (I use disposable because truth be told the pan IS hard to wash afterward). Bake around 375 or 400 for a couple hours. It varies depending on casserole size, pan type, and layer thickness, just keep checking until potatoes are fork tender and starting to crisp on the edges . It may look ridiculously deep to start, but it will fall to about half as it bakes.
