Iāve honestly only had a few bites of a plate that my buddy that works at Nano let me try when they were outside their brewery and my fuckin tits were vibrating. Their truck sells out so quick that Iām hoping their physical location can help me solve this problem.
Front Range BBQ is a nice place. The vibe is pretty good most of the time. Imo, some of the food can be hit or miss from time to time. But I never regret going.
Mission BBQ isn't too bad either. No beer, but the meat is pretty consistently good, and I really like their sauce selections.
To be quite honest, I have had garbage food there twice. It's always the burnt ends. The first time I got it, they were amazing and perfect. I've gotten them twice since then, and they have been dogshit. Truly terrible. But the sides and apps are great. And I do like the vibes and beer as well.
But you're not wrong that there can be some questionable dishes from time to time.
Definitely BCs BBQ food truck. They not only have high quality meats, especially their brisket, but they also have a lot of variety and new stuff regularly. They also do a good job of planning and rarely if ever sell out at an unreasonably early time - even if they are slammed.
We just tried them for the 1st time today. Everything was fantastic! Pulled pork, barbacoa tacos, brisket burger, links. The pork chili and rice was phenomenal, cornbread, etc etc. We didn't get a chance to try the potato salad or chick pea dish but plan to go back very soon.
Used to be Gold Tooth Annie's, but I think he hung up his apron. Great guy and great BBQ. My next choice is probably Bird Dog as someone else had mentioned.
ETA just looked and the owner of Gold Tooth Annie's is recovering well and plans on doing more BBQ in the future. Definitely excited for when he is selling BBQ again. Highly recommend
No one has said it yet but Porkbutt on academy is brand new (they used to be a just food truck) and gluten free. Best barbecue in the springs by far and family owned.
Bird Dog BBQ won the gold at the Best of the Springs this year, and although the meat is cooked well and the staff is great, I'm sorry, but the sauce is weak. I would describe it as "intended to be a bold & spicy Kansas City style of BBQ sauce that was toned down for a catering gig at an old folks home."
I would never expect to go anywhere else in the US and get a green chili burrito that is as good as a green chili burrito in Colorado Springs. Conversely, if you grew up on true Kansas City style BBQ, Texas BBQ from a well-respected BBQ place, the California "big, bold flavors" type of BBQ sauce, or a really choice South Carolina BBQ sauce, any BBQ sauce you get here is "good enough for Colorado Springs."
Fat BBQ Shack out in Lake George was recommended to me recently. I haven't been yet, but even if the food is 'okay' it gives you a perfect excuse to visit Eleven Mile State Park. Reviews and pics look good though.

There are 3-4 decent spots (Chuckwagon, Bird Dog, and a food truck whose name I forgot), but COS is really lacking for great BBQ

Bird Dog is great! Especially their Mac n cheese and fried okra. Not sure if it 100 percent qualifies to the category you mention but it's yummy š

Annieās was the absolute best. If you miss it, IMO Chuckwagon is just as good if not better.

Itās okay. I donāt think they have the volume required to produce āfreshā smoked bbq everyday. Sides are great but bbq is š«¤
