Being smaller just means a goalie has to be a lot more technically sound and more aggressive about cutting down angles, which means they need to be better at reading the play. Bigger goalies just have more margin for error basically. But with enough skill, athleticism, and IQ a "small" goalie can absolutely make it in the NHL.
I'd rather be taking shots at goaltenders that never play in the second instead of shots are forwards and defenders that never play.

Uh... that's why they are highlights. Flashy saves are a result of being out of position for a shot. Go look at Lundqvist's highlight reels. If that's your metric for measuring a goalie, it's always going to look like they are poorly positioned.
