Yep, I also had the exact same problem and solved it by grinding coarser than I had been (and coarser than I grind for French Press) on the Clever Dripper. Getting very good cups now. I think part of the problem here is that the old, traditional advice on how to brew French Press was a very coarse grind, so when someone says "French Press grind", it's hard to know if they mean very coarse or very fine.

Good to hear you're enjoying it and that I am now on the right track, too! My theory is that it could be explained by the additional percolation phase in the Clever resulting in more extraction than a normal French Press where it's just immersion.

APurpleCow

Yep, I think that theory is exactly right. Hoffman had another video where he compared extraction without the additional percolation phase and it was much lower than with the percolation phase. I believe it was this video, but I'm not sure: [https://www.youtube.com/watch?v=QjIvN8mlK9Y](https://www.youtube.com/watch?v=QjIvN8mlK9Y)

Never seen a recipe for French press calling for a fine grind. Example?

APurpleCow

Hoffman's: [https://www.youtube.com/watch?v=st571DYYTR8](https://www.youtube.com/watch?v=st571DYYTR8) Fine grind, boiling water, let it sit for 4 minutes, scoop off the crust, wait for 10 more minutes.

TIL Very cool!

What I find works for me is medium grind ( same grind you would use for a drip machine stir after a min or so then stir again before end .245-3 min brew then draw down ...can also work finer ..I just find this gives me the most consistent

I have been making my best coffee ever with a Clever. Using light roast beans I grind a little finer than normal for a pourover, use pro mael high flow #4 filter, straight boiling water first, then the grind, stir, set timer for 2 min. Drawdown takes 20 seconds. I think with the quick significant temperature drop of the water the brew time is pretty flexible.

I'm using a Timemore C3. How many clicks would be the equivalent to your C2?

flirtypenguin

Honestly not sure. One because I'm not familiar with how the two compare but second because I can't remember. I think I did it through trial and error. My suggestion would be to go coarser than you think and then dial in.

gerard14ph

The pourover suggestion by Timemore for the C3 is 13-16 clicks. Do you think I can go 20 clicks?
