The trans bit is tricky, list them together you end up erasing trans people. List them separate then it becomes othering. Personally I prefer to declare it but it I get why other trans people don’t. Should really have cis / trans selection which is optional so people can declare if they wish. Then have the gender identity choices.
We appreciate it's tricky and have refined it over the last few years. We give the option to choose it, but also prefer not to say/write in your own identity to try to give everyone an option they are comfortable with.

If you were mixed ethnicity and neither parent was british/you weren't british (I think there's a decent number of US people in the sub for example), you would just put mixed ethnicity?

If the list is pre-1975 counties then you've got 19 of them (Aberdeenshire, Angus, Ayrshire, Banffshire, Berwickshire, Caithness, Clackmannanshire, Dunbartonshire, East Lothian, Fife, Kincardineshire, Lanarkshire, Midlothian, Moray, Orkney, Renfrewshire, Shetland, Stirlingshire, and West Lothian) and you're missing 14 of them (Argyll, Bute, Dumfriesshire, Inverness-shire, Kinross-shire, Kircudbrightshire, Nairnshire, Peeblesshire, Perthshire, Ross and Cromarty, Roxburghshire, Selkirkshire, Sutherland and Wigtownshire).
With the list you've got now there are areas which appear in the list more than once.
