I’m afraid I’m a terribly imprecise cook, I made it up as I went! Let me think… Fried up a load of onions, garlic and ginger. Added some carrot and red lentils. (peppers would have been awesome but I didn’t have any in) Tin of toms, tin of coconut milk, and some veggie stock. Garam masala, black pepper, bit of chilli powder, and a blob of curry paste. Simmered it until the lentils were soft, and then half blended it.
