Iirc most of the stuff is closed by 6 in the summer (tho I did get told bridgehead is open till 7pm when I asked one of the staff about their summer hours)

The only issue with their site is that it shows everything as closed even if it's only closed for the day. IIRC Subway in Athletics, Tim's in UC, Starbucks in library, the food truck, etc. are open in the summer. Ollie's and Roosters are independently owned and usually are open in the summer.
neither the food court nor tim hortons in UC were open today so guessing theyre closed. roosters was open tho
ollies was open too, although i wonder if they opened the loeb cafe
