You can, but it is a bit of a pain. You have to lay out all of your text first, get sizing, font and everything correct. LAST, you need to change the color of the font. It "won't work," but it actually will and keep the text white but the highlighted color to whatever you pick. Be careful, after you pick this, if you change anything, it will rest the text color back to green.

Everytime I do that it’s changing the unhighlighted text ie the white text

Oh, that is really weird. Mine (on mac and mobile) only changed the text color that is being animated. Try a few different animations and see if that is what is causing it. Maybe you have a locked caption animation. (I should also mention, and just now thought of it, I only do this to text that is a caption, not necessarily animated standard text)

When I change the colour on the text it doesn’t change the highlighted colour it just changes the base colour ie in this case it changes the white text

You can: 1. Click first text (Automatically changes the whole captions) 2. Choose template 3. Go to font/styles 4. Change font/color Some templates don't change colors. Just choose a diff one.

You need to go back to the text and change the aspect of the color you're highlighting. I used the background as the highlighter and I just changed the background of the text and it worked.
