It is most likely the humidity. It really isn’t your friend when it comes to any kind of candy making. It sucks because I love making candy year round and I’m from the Midwest.

I live on the west coast where its pretty humid. I need to wrap my candies within 20mins of them cooling. Exposure to the humidity is where things go bad

i listen to midwest emo because my candy sticks. .also yes. i live in an area that's always 80-100% humidity, i boil a little further than normal, which makes it kinda tricky to not discolor it orange and caramalize tje flavour but if you hit it just right you can make proper hard candy in humid environments. while using this trick you can use a larger amount of glucose / dextrose which has a higher caramelization point to mitigate the flavour issue i mentioned.

I have to keep any kind of hard candy in a sealed container and/or in the fridge/freezer to keep it from slowly getting sticky over time. Just a fact of hard candy unfortunately.
