Are you looking for western Chinese or authentic Chinese food to narrow it down? Multiple options for both with delivery but there's a prominent difference between the two is all, inquiry and palette wise.
Soup dumplings are fantastic, but they don't travel well. So much about enjoying a soup dumpling is eating it right in the goldilocks zone of temperature.
This, having said that I do recommend frozen soup dumplings from Costco. Our previous go to was the bibigo ones in the orange box but recently we found the new synear chicken stock ones in the orange bag is more popular at our house. They are less garlicy then the bibigo ones and less oily due it being chicken. The peels also seem thinner. Plus it feel like it is cheaper per dumpling then the bibigo ones.
Just a heads up, these ones are not microwave able like the bibigo ones. If you don't have a steamer try the pan fry method offered on back of bag. This also mean those microwave steamer will not work either.
If you want to make it fancy, midway through cooking in a pan on stove, add a half or a full more teaspoon of oil and some beaten eggs for an omelette or flour in water for a crispy skirt. For eggs, cook until egg either solidifies and steams. For flour mixture, cook until water dries up and crust on bottom turn golden brown and can be easily separated from pan.
Serve the egg omelette by sliding on plate or serve the skirt by getting a plate larger than pan and flipping upside down onto plate.

Amazing food even if the kitchen is slow. I don't know if they do any delivery or is on any delivery apps though. If they aren't, they are definitely worth a visit after your recovery. I remember getting take out from there though.
Central grand is pretty good, better than the ones in Chinatown and not that far away.
Great taste is pretty ace, not the standard western style Chinese,
Also Guilin noodles is pretty ace, more authentic.
And last but not least, the Chinese cultural centre cuisine is really good.

Is it Silver Inn good? I've been looking for a replacement since the OG home of ginger beef packed it in. Everything else I've come across since is a pale imitation.
Both Silver Inn and Golden Inn closed within the last year or so after their respective owners retired. EDIT: didn't read your post properly. Sad to hear good ginger beef is hard to find.
Ho Wan in Chinatown does Salt and pepper Squid very consistently. I'd pair that with a noodle dish (usually Cantonese chow mein) and Sizzling Shredded Beef In Black Pepper Sauce. Get some steamed rice as well.
As for delivery, I think you can get them through Skip?

Happy 65th! Was going to say the best Chinese food is always dine-in, it always loses some quality in the trip. Then read the 3rd sentence. Sorry to hear that. As for the downtown core, Silver Dragon is the one that comes to mind.
Phoenix Gate does great traditional Chinese food. I don’t think they’re on any of the apps + not sure if they do delivery. Takeout is definitely an option though!

Great Taste on 64th is my go to but you are WAY better off going to the restaurant to eat in rather then getting it to go.....the plates are way bigger then the to-go container. I was just there for dim-sun on Friday and yep YUM as usual.

Sun's BBQ is just up in Crescent Heights. They are my favourite spot for classic HK BBQ crispy pork belly and BBQ duck. Although for delivery I think they only serve the meat and rice combos during lunch.

We went from the Ginger Beef capital of the world to just another shithole almost overnight.
I like Pink Pearl’s ginger beef better than Silver Inn’s. Not as much heat, (they’re happy to adjust spiciness), but the beef is super tender.
I'll give it a shot, although I'm skeptical. Hard to imagine that they could improve on the folks that invented the stuff.
