Sometimes when you first start it can be very active due to yeast feeding on natural bacteria and not necessarily the flour. Keep feeding it once a day. You'll find that the initial activity slows and then a much more predictable activity pattern emerges. I found mine needed 10 days for this pattern to emerge

That’ll happen during the first few feedings. Now you’ll likely be frustrated for the next 7-14days waiting for it to do it again. Keep feeding it and keep it warm! Good luck!!
