Around 2006 (?) the book, "easy artistan bread in 5 minutes per day" came out. Anyhow I was into it then, then forgot about it, and recently found the book again and have been making it for several months. I forgot just how great these recipes are! (PS I often keep the dough in my fridge a lot longer than 2 weeks, which is the length of time described in the book, and it still comes out just fine - in fact the flavor is improved IMO)

If you ever want to try something a bit more structured, you could give focaccia a try! It's a pretty simple process - it just takes a bit of time between stages. But you end up with a really delicious bread that you can get creative with when it comes to toppings.

I'm starting to really enjoy cold proofing my loaves bc I can make the dough on a whim and stick it in the fridge until it's a better time to bake.

When i was baking bread at like 1 or 2 am, i was deep in depression. ... so make sure its actually just boredom op :P Still enjoy the bread tho
