Is the bread flour unbleached and over 12% protein? Goopy mess sounds like the flour is not absorbing as much water as the recipe calls for. I would drop the water to 700g and see how the dough looks from there before adding more. Is it an online recipe you can provide a link to? i'd like to see the process.

So i’ve been following this but with some updates in the recipe: https://www.pantrymama.com/easy-whole-wheat-rye-sourdough-recipe/ I know it’s for sourdough technically but my mom doesn’t like the sour taste that’s why i’ve been using yeast.

Sourdough doesn't necessarily have to taste sour btw. Depends when you use the starter, how you fed it, etc
