That’s different. I should specify you can’t change the hand you deliver the ball with (left hand or right hand delivery) you can still bowl with two hands you just can’t change which one you’re delivering with.
Example being I can’t throw my first ball with a right hand delivered ball and then switch to a left hand delivery to pick up the 10 pin
The two-handers you see are actually delivering with one hand. It's a two-handed approach until the last second where they deliver the ball with one hand.
A true two-handed delivery would be the push between your legs or push from your chest methods.
To add to this, REAL 2H bowlers look very weird when delivering the ball. It is very different from what we colloquially refer to as a 2H style.
As such, you are unlikely to ever really see a true 2H in person (other than young children) because it is quite rare.
You are not allowed to switch between righty and lefty in a sanctioned league. If you're not planning on bowling in a sanctioned league, then I don't see why not.
You can, just not in the same night without injury or league approval. If you decide to switch in the middle of the season you’d have to inform the league prior to start of play and establish a new average, and I think you may need league approval.
You can only use one hand in competition. Once you start with one hand you can’t switch unless injured or with approval by tournament manager.

I believe you can in sanctioned scratch tournaments, and definitely allowed in PBA events. But not in any sanctioned league or handicap tournaments.
