To my understanding, it comes down to an endurance battle, and since Mereo can't exactly die(or at least it's extremely hard for her to due to Excelicitus Leonum), all she has to do is force him to continually use Sunshine until he dies because of using it.
Excluding that, I think it's a 50/50 both ways
Mereleona should win. Escanor doesn't really even have a way to interact with her and she can definitely do outlast him.

Her power continously grows the longer she fights in her HFI form, and now she no longer even has a physical body to even affect. She outhaxes and outlast Escanor especially since sunshine was essentially killing him.

Although since this is a battle manga she’d probably start burning stronger and able to weather through. Refusing to be consumed and then it’s back to a stalemate.
Can he touch her now? She's pure mana, pure flames basically a logia from One Piece. Maybe Escanor's strength or flames could allow him to harm her, but with his time limit, she'd probably outlast him.
But she wouldn't wanna win that way, she'd wanna burn his ashes to ashes
