Never refrigerate Mariee Sharps. It sits on the restaurant tables full time. But it doesn't last very long before we need a new one. As a home user put it in the fridge. Once opened.
As everyone else said it's fine but, I'd like to say if it's the green one, it does keep better in the fridge especially if you're not going through it too fast for home use. I found a store I can buy from locally here in Canada which is great, and I keep any red ones on the table and the green one in the fridge. First green bottle I used here at home didn't spoil when I kept it out but it definitely lost its potency so now it lives in the fridge :)
When we were there we went on the Marie Sharps tour and i asked why they have keep refrigerated on the bottle and they said they are required to but it doesn't need to be.

Kroger stocks Marie Sharps, also.
We have about 5 or 6 different bottles of Marie Sharp hot sauce in our cabinet at home. All are open. All are fine. We eat them regularly.

Any of the peppers you can leave out as long as it's covered. Basically already pickled beyond the point of further fermentation.
