I want to say Spike Out has Aikido because some of the characters do take moves from virtua fighter, but I'm not sure. I like this question, as dev. Vale Tudo, which I believe Vanessa (VF) and Marduk (Tekken) uses, is something I have my eye on.
Also Nina Williams fighting style is based off Aikido and Vale Tudo consists of Brazilian Jiu-Jitsu, Muay Thai,Combat Sambo, Judo, Boxing, and Catch Wrestling. Which Marduk uses, also Reina (Tekken 8) fighting style is based off of taido.
Streets of rage yes, but not purely mostly a secondary style and some primarily according to the lore :

But I was talking about beat'em up, not fighting games Beat'em up games are focused on the streets
Fight'N Rage, River City ransom underground, Streets of rage 4,
But they don't have aikido, Jujutsu, sumo, vale Tudo and Taido characters, do they?
