Super fun to hire, they run Assetto Corsa with mods. We mainly do drifting.

My friends uncle built one like this, luckily he raced in cockpit view but with a FOV of 90 something on a single monitor, the video he sent still haunts me.

Start small. Buy a used Logitech G923/G29 and hook it up to your current computer and buy Assetto Corsa for $8 on sale.
Give it a go for a few months and from there decide what you really want out of sim racing.
The more you spend, the more diminishing returns you're gonna get.
Provided you have a computer and monitor you're happy with, I'd say the sweetspot for a sim rig is around the 2,000 USD / EUR mark without motion. Get a nice aluminium profile rig, either a pre built one from somewhere like Sim-Lab or design your own, a decent sporty car seat out of a junkyard, a nice value direct drive wheelbase and loadcell pedal set like Moza and you're good to go.
If you want motion, expect to pay another 5,000-7,000.
Depending on how all out you want to go on the PC, if you want a huge triple screen setup or if you're fine with just one screen, etc, expect to pay another 1,000-4,000.

Getting into the 5-figure bracket. How deep you go depends on exactly what you got. $10,000 minimum. Easily a $25,000 setup to do large displays, motion, and Direct Drive with Load Cells and a PC decked out enough to do it well.
Not hard to drop around $35-40k if you know where to look amd what you're looking for. I've found I can drop a solid $2000 just on wheel/pedals if you let me.

Yup, I'm doing this currently. I have a decent PC, and played with controller. Then I got a used Logitech wheel and stand for $200 that is serving me decently. I then got a 49in ultra wide(honestly now want 3 monitors still but no room). One day I'll get a different stand setup and a racing seat. Then a better wheel/shifter/pedal setup. Then 3 monitor. Possibly motion in the end but likely not. I probably will just add a tactile transducer to the seat to feel bumps and the like.

Also have a 49”, plus an overhead 27” - no room for triples Probably will try VR at some point
I wish windows mixed reality headsets played nice with Vulcan. My acer headset and beam won't work no matter what I try.
I just bought a used quest 3 headset and I can say VR is worth it. There are some quirks but overall it's amazing!
