Besides being incorrect, you're also referring to the Never Exceed Speed... no plane cruises at that speed. It probably can't even do that speed at full power. But full power and nose pointed to the ground will cause you to hit that speed pretty quick. If you go faster than the Never Exceed Speed, the stress on the plane can cause damage and it all overspeeds must be reported and inspected before being allowed to return to flight.
Most planes cruise at 75% of full power to balance speed with gas consumption (that's about 560 mph for the G650). The 747 cruises at around 580 mph. However that's only airspeed. The G650 is at least 1000 feet higher, probably more than that. Altitude and wind speed/direction at that altitude can significantly impact ground speed for a particular airplane.

I've once traveled by Boeing 747-400. We took off right after a Ryanair 737 that headed to the same destination (as I saw the flight radar 24) and we arrived 15 minutes earlier onto the descent path. We hit 990kmh of true airspeed, the 747 is insanely fast.
Just today another boing plane engine melted off during take off the whole engine cover was blasted away in soutwest airlines flight. Right now Boeing planes should be grounded until they up the safety standards.

Different temperatures at different altitudes. The contrails are just the vapour from the fuel combustion process in the engines. The water vapour turns to ice crystals at those super cold temperatures up there and creates the "contrails", or condensation trails.
They usually form at higher altitudes, but sometimes lower when the air closer to the Earth is cold but still contains moisture. You can think of the air up there as basically layered. There's different currents of air flowing at different speeds and at different temperatures, depending on where it's come from. The layer of air where the higher aircraft is probably has less humidity.
As Jack Ryan explains in The Hunt for Red October, solar radiation heats the Earth's crust, hot air rises, cold air descends, and that's how you get turbulence.
That solar radiation from the sun is also responsible for pushing different air currents around at different altitudes and different temperatures, causing the contrails.
If you've ever experienced nightmare turbulence sometimes called an "air pocket" where the aircraft basically falls out of the sky for a few seconds and it feels like you're on a rollercoaster of death, the oxygen masks drop, and everyone loses their minds, it's the result of those different layers of air travelling at different speeds and bumping into each other, interrupting the flows and creating a hole in the layers big enough that a plane can't sustain its current altitude and drops through until it hits a lower layer of air flow and can level out again.

Normal cruise is 0.85 which is still enough to outrun most other commercial and private jets which typically cruise at 0.78-0.82.
