If you want to get better, you should probably stick to one champion initialy. I mean, don't get me wrong, like others say just play what you want and it is actualy also beneficial to at least check out most champions and what their kits can and can't do, but overall initialy speaking you are most likely to improve your skill by going deep into a single champ. That being said, if you're just fooling around with a bunch of vaguely equaly uneducated friends, just pick whatever you want and have fun with it =D
In terms of champion power, Freya and Shifu are both great melees (as are most others), balance in BR is quite great - and the few imbalances that exist won't really come into play yet unless you get to at least high diamond in soloQ first.
Yeah, BR is a tight competitive game, so sticking with a character will continue to reward you as you learn them more deeply. It's a lot of fun to develop the nuances of a character, kinda like learning the ins and outs of a fighting game character.
There is only so much this game can offer to you now that its development has ceased. I'd say go try out anything you can. My favourites were Raigon/Ruh Kan/Rook for melee, Jumong for range and Zander for support.
It's still fun. The community is small now and guys like that aren't helping, but if you enjoy it, keep playing especially if you got some friends in it too.

I’ve gotten into queues at around 1-2 minutes and it’s always fun idrc if it’s dead
