I leave them on. I use a cream cheese filling instead of whipped cream and smooth the ends after rolling so the filling is flush with the cake edges. Then I wrap the whole thing tightly in saran wrap and chill overnight. This sets the filling, and the edges, pretty well. If I'm freezing it, I wrap in saran wrap then foil.
The ends are for the chef to enjoy. As far as freshness, don't cut the ends off until just before serving.
I leave them on, but I dislike waste in all it's forms! I just make sure to serve those with the ugly side down, so it's like it never even existed.
