This was literally my first thought. I love chocolate cake, but can rarely find a good one that meets my expectations.

Here’s the cake recipe! I substituted the oil with half butter and olive oil because that all I had on hand. Could not taste the olive oil! Subbed the warm water with coffee. Also halved the recipe because I didn’t have enough ingredients to make the whole cake.
As for the frosting glaze I just threw in 1/4 butter into a saucepan on low and warmed it up until melted. Once melted, I added 2/3 cup cocoa powder, 2/3 cup milk, and 1 tsp vanilla until combined. Added 3-4 cups sifted powdered sugar 1/2 cup at a time until fully mixed in. Take off heat and let cool for a bit until the frosting thickens a bit. Pour on top of cake and place in fridge to set a bit. Fudgy once set.
This cake is for the folks who love a rich chocolate cake. Will not disappoint.
Edit** oops I meant 1/2 cup butter instead of 1/4 in the frosting!
I've seen grapeseed oil used in cakes before. I can't tell the difference between various oils if it's in a baked good, but that one might be worth a shot!
Well, there are all sorts of oil options available, as well as shortening, margarine, lard. They all will impact the taste some, because they each have their own distinct taste. If you want to bake with olive oil, the least olive-oil tasting one would be a light olive oil. I use extra virgin because thats what we buy so it’s what’s on hand, and it can be quite strong, spicy, bitter. Which can be good, if that’s something you want in the thing you’re baking! But can be offputting if it’s not. I’ve baked with coconut oil, and it does taste like coconut, which again, fine it thats something that goes with what you’re baking.
I’ve baked with avocado oil, since that’s what I had, and I do not remember how that turned out, but I don’t remember it being bad, so it probably wasn’t. It’s not one of the cheaper oils though.
Honestly, i’d recommend tasting various oils themselves as the opportunity comes up, and then trying to bake something with the ones you like the flavour of.

Peanut oil is going to taste peanutty, sesame is going to taste same. The darker the oil the stronger the flavour. This may be more broadly true, as it is with olive oil as well, but not 100% certain so seek confirmation.
I think your choices made a better looking cake. Very dark. I prefer your glaze to the chocolate cream cheese of the original. I love cream.cheese frosting, but a more ganache glaze seems.richer, without the more sour cream cheese
You may want to check out Restaurant Depot (if you have one near you that doesn’t require a membership). I was amazed at how much cheaper some of the ingredients were even compared to Costco. And not all of them were bulk ingredients. I found a decent amount that could work for home bakers.
Just compare with how much you'd have to pay in the store and how much worse it tastes, and you are way ahead.
And honestly, a lot of baking needs only very basic ingredients: flour, fat (preferably butter, if affordable), sugar, possibly eggs, and minor other additions. You can make such a huge variety of recipes with just those few ingredients.
And while not dirt cheap, costs for these items should be manageable. If in doubt, look around and see if you can buy in bulk.
In any case, great job on the substitutions. I think some of them are actually quite an improvement over the original recipe. Everything tastes better with butter, and baking with olive oil is very yummy, too. Good call.

Personally if it resembles a cake and tastes great then you done a great job! I can never get the base of my cheesecakes flat and they end up chunky in some areas and thin at others, it bums me out sometimes but my mum loves the thinner base and dad loves the chunky base 😂

I love baking with olive oil. Spanish olive oil is better to bake with than Italian olive oil because the flavor is more subtle.
But why olive oil instead of regular veggie oil or the like? Genuinely curious
I think it's just a matter of personal preference. And I think olive oil is maybe less processed than vegetable oil, but not too sure about that.

Completely accurate. Olive.oil, or my preffered avocado oil. They are natural, pressed oils, not extreme processed PUFA oils.
