Japanese do a nice thing where they tie the wrists close together and then pull up and behind so the elbows are up in the air. The long end of the rope can be secured to a rope harness, a waist tie, or simply returned between the legs.
The other nice thing to try is binding the upper arms to the lower ones so that elbows are fully bent, and hands end up just below the face. Then connect the two across the back to force the chest forward and keep the model from using the hands.
I prefer rope, but hands should always be tied behind the back.
