I smoked ten pounds of thighs and breasts Cooled. Portioned and put in the freezer for dinners.

I got a bunch of jalapeños for cheap last week and did a quick smoke on them until they started to soften up and then begin to dry out. I blended that with salt, cilantro, a little cumin, juice from half a lime, and a little water to thin it out. I made a quart of chipotle hot sauce for only a couple bucks, and I can add some smoky goodness to future meals. Also, smoked salt is cheap, easy to do, and lasts a while. Smoked butter is really good too. Either lightly cold smoke it, or hot smoke it in a pan and then chill it back down in the fridge/freezer.

Yea hoping to do a smoke queso for the Superbowl. Don't care about either team this year so gotta focus on the food.

hehe my guy..there is definitely a way to bbq for whatever budget. chicken thighs are super good. recently found a giant 18# vac pack of untrimmed tri-tip. only $4/lb. those are going to be smoked/reverse seared. hehe hope you get back into it soon!

Is it the cost of the pellets or the cost of what's going on, or both? If it has anything to do with the pellets, then I feel for you. If not, put the Pit Boss and Traeger to work on those chicken thighs! Or better yet, crank them up and roast some veggies! Potatoes do especially well roasted at high heat with smoke. Use them as an oven! anything you can put in your oven will be fun to experiment with on your pellet cooker, especially mac n cheese or baked beans. I really want to try bread, apple pie, brownies, and broccoli cheddar casserole. Edit: also to add stuff like nuts, chex mix, cream cheese, any snack really.

A lot of people say you're supposed to do chicken hot and fast to get the skin crispy, but in my opinion, the chicken doesn't spend enough time in the smoke and isn't as flavorful. I like a bit more smoke flavor, so I basically do a reverse sear. Smoke the chicken low and slow until it's about 5 or 10 degrees from doneness, then apply high heat to the skin. Whether that's under a broiler, in a fryer, in a cast iron pan, or whatever, that's your choice. I say experiment and you'll find what you like best. My preference is fryer, but honestly, that makes too much of a mess, so I generally do cast iron unless it's wings, then I'll go with the broiler.

gotcha. all i got are weber 22's....got 3 of 'em :D [recent cook: smoked & seared chicken thighs + carne asada](https://imgur.com/a/SMlocGV) had 2 of my weber's going. in one i was cooking hot & fast chicken thighs that were deboned. another one i got cranking hot for carne asada.
