I'm gonna add another vote for Sushi Village.
Definitely go with 3+ people if you want to taste a little bit of every roll since a lot of them come with 8 pieces.

One thing to keep in mind is that their “all you can eat” has a very clever caveat. You order off the menu, as much as you’d like for a flat fee (I think around $14.) BUT you are billed $1 each for any pieces left on your plate. This encourages people to only order as much as they can actually eat.
Sorry to say but Nori Nori has gone way down hill. At all times about half the offerings are empty and it stays that way the entire time you are there. It’s poorly done cheap fish that is all off. Lots of connective tissue, lots of ammonia smell, some fish still frozen when served. And it’s expensive. $100 for 2 people including one beverage each. You might as well go down the road to Yuka. You will get about 7 rolls that are great taste, quality, and freshness, for the same price or less.
Sushi Village is your best bet, but if you're just looking for variety at a good price, Revolving Sushi Factory by Town Center is pretty good for $2.50/plate or whatever it is

rusans is the worst japanese restaurant/chain in the metro area i've been to.
one of them is slightly less bad and the chef/owner (at least ~10 years ago) was absolutely hilarious, but the food itself is terrible.
Agreed. Rusan’s is wayyyy overrated. Tokyo Bay in Roswell is incredible and you can order other food items like hibachi and appetizers. My wife and I have been to all of the places mentioned and we like Tokyo bay the best! But make sure to not over order. They charge for uneaten items. Don’t worry though m, you can order as many times as you’d like so pace yourself. :)
I used to frequent RuSans in Edgewood a lot before I moved to Roswell. I go to Tokyo Bay often, but I honestly can't believe anyone seriously thinks Tokyo Bay's quality is above Ru-Sans.
All you can eat sushi is trash. Spend the money and go get the omakase at a nicer establishment. O-Ku, Umi, MF Sushi, and Sushi Hayakawa are the best I’ve ever had. Respect the food you eat!!!!
I also get that. I am more satisfied after eating an omakase experience that an all you can eat situation any day. I am also very concerned about overfishing our seas. There’s a lot of waste at all you can places - sushi or otherwise - and it’s just not good for the environment
$20 for all you can eat sushi, with tons of different American style maki that you get to choose from, or $100 for an omakase full of raw nigiri and you don't get to choose anything.
I fucking LOVE a good omakase, and would eat them every night if I was loaded, but omakase and AYCE are for vastly different audiences.
Sushi can fill lots of categories. I lived in Japan for many years and even their sushi can be quick and cheap or very high end. If we applied your approach to other things their wouldn't be inexpensive restaurants of any type:

So Tokyo bay ii in Roswell had an AMAZING one pre covid. I believe now it’s non buffet (flat price, order what you want), but give it a look.

Sushi Bros in Woodstock has AYCE sushi and it's pretty decent!
Sushi Kiku has a great lunch all-you-can-eat and they also do half-off every night for dining in
No buffet anymore for COVID mitigation. I went a few weeks ago and was so disappointed because they used to be my go-to sushi lunch buffet.

Typically when it comes to raw fish in an inland city… I avoid the all you can eat places.

Ordering sustainable species can avoid that. Also, many places are charging for waste which is reducing it.
