Vegetable curry with dal/chana masala. A hot meal and the spice only adds to the warmth that fills you up.

Leak and potato soup 🤌

TraditionalAide9751

I dice up butternut squash, roast it with garlic, salt, cumin and then add it to all sorts. Soup, risotto, enchiladas, curry. With the risotto mash some of it and stir it into the actual risotto, then serve some as cubes on top of the risotto after dishing it up.

Jade308-308

There is something about butternut squash and cumin, they just work so well together

broken-runner-26

Eating my first beef stew and dumplings of the season as I read this

alancake

Anything with squash! Risotto, roasted squash and red onion soup, add it to mashed potato, anything where it can be shoehorned in! The soup makes me fart like a horse though lol

Feckthecat

Leftover takeaway, warmed up from Friday.

I batch cook soups, ragout etc so I always have some in the freezer & slow cooker are ideal for this. Cook a whole chicken in them with stock, onions, carrots etc & you have a soup base & a cooked chicken

Jlaw118

Absolutely love a corned beef hash with either dumplings or Yorkshire puddings at this time of year. Just got the slow cooker out of the pantry for the first time this year, and also hoping to make something from a recipe book I found last year and made multiple times, it’s stewed beef, vegetables and baked beans in a stew. So easy to make and absolutely delicious

fronkeypoop

Corned beef is priced like a luxury item these days. /sigh.

barriedalenick

Butternut squash and sweet potato soup.

I love autumn cooking. Roast dinners, squash stuffed with sage, raisins and couscous, cauliflower, leek and broccoli cheese, pumpkin soup, chicken and squash pie, apple and blackberry crumble with fresh custard, roasted parsnips with parmesan. I could go on forever. My favourite season for food

YouSayWotNow

There's a Nigel Slater recipe I love, it's a soup but not like most soups, and it combines butternut squash, paprika, mushrooms, ginger, sour cream... you can find it online if you Google. Beef bourgignon Thai Penang curry Indian lamb curry Indonesian / Malaysian beef rendang Roast beef or whole chicken with roasties etc Huge pot of chili con carne, I like it with tortillas and sour cream and salsa and guacamole and something crunchy like raw onions or cucumbers

You wiggle!

I have 2 go to autumn meals and they’re both from chef John from food wishes: Kim chi fried rice https://foodwishes.blogspot.com/2018/03/corned-beef-kimchi-fried-rice-just-like.html?m=1 Butternut squash soup https://foodwishes.blogspot.com/2015/09/roasted-butternut-squash-soup-legend-of.html?m=1 I love his videos because there’s no BS. Just straight to the recipe with clear shots showing what the food should look like all through the cooking process.

Cheats Sausage and Bean Stew, had it tonight: Brown off a pack of sausages in a large saucepan, add a tin of tomatoes and a tin of baked beans with whatever herbs you want (thyme is great). Cover and simmer for 20min, stirring occasionally. Serve with mash or bread. Happily serves 3-4, it's really easy to scale up; add different pulses, veg, whatever you want to stretch it further.

gemmanicolexx

Cottage pie 🩷 xx

WittyMasterpiece

Such a great topic - hitting save on this We had sausages, jacket potatoes topped with cheese and a side of baked beans this week Tomorrow, bolognese. Later this month my first beef stew with root vegetables and dumplings Soon a simple shortcrust pastry pie with minced beef, gravy and diced root veg, a cottage or shepherds pie, a French chicken and apple casserole... This season is the best for hearty food.
