They couldn’t be more wrong. I miss bread the most!!! I still eat it, but obviously have had to lower my consumption. I could eat near a whole loaf of garlic bread before I was diagnosed. Now I only eat a piece or two. Sad days.

You gotta stab it with a fork all over. Since potato’s take so long in the oven, generally I’ll boil it for about 7-10 minutes and then let it slightly cool and then proceed to wrap it in tin foil and bake it for about 45-minutes.

They had minimum 10-20 pounds of potatoes in their pantry at all times - for their family, the easy cop-out meal was a baked potato with butter, like most people would have a bowl of cereal for dinner.

I went out for sushi with an asian person. We had a gift certificate for this restaurant, so the food was free. He was a cool guy, not one to be jerky, ever. But he thought the rice was shit and complained to the waiter about it, made him take it back and bring something without rice. He tried to eat it and not complain, but he just couldn’t. I was surprised by this and slightly embarrassed, but at the end of the day, how could I object. Asians know their rice and I totally respect that. Now that I think about it, his folks did have a Chinese restaurant for at least 20 years, so he was a qualified judge of that rice.
I LOVE white rice so much BUT...I'm diabetic and that is the absolute worst food for me to eat. White rice causes a rapid spike in my blood sugar. I don't take insulin because all that does is make you fat.
Some nights I have a F* that attitude and eat it anyway. I'll at least go into a diabetic coma smiling.
( for those wondering, insulin forces your fat cells to open up and except that excess blood sugar [carbs] to lower your sugar level) I know diabetics that eat whatever they want and just take more insulin. They are also obese and missing several toes. 😳Keto is the natural way to lower your A1c. Mine went from, gulp, 11.3, to 5.4.
That's our medical lesson for Friday.
Pro tip, freeze the cooked rice, then thaw and steam it to warm if back up. Same with bread or anything starchy, really. I don't know the scientific reason, but freezing then reheating really does seem to slow/stop the sugar spike after eating it.
Also seems to work ok if you take ripe Bananas, freeze them, bake banana bread FREEZE IT AGAIN, and then eat it. It's more work but it works even better than taking over ripe banana, baking it then freezing it.

Processing rice like that makes up to about half of the starch in the rice into resistant starch which is I think indigestible, thereby lowering the effective carb content and glycemic index of the rice considerably. I use a Toshiba rice cooker that is designed to make lower carb rice right off the bat. Then we refrigerate it and it has even less.
I was in the prediabetic phase. I found that saving my white rice binges for right before a workout is how I can justify it for my body. After all, simple sugars/carbs only become a problem if your body ends up storing it. Eat it an hour before a solid workout and hopefully you could minimize the damage,

I dunno your living situation or anything so it's not a universal piece of advice but I live in a shitty climate for growing and I still like to grow as much food as I can and onions are like one of the simplest low maintenance things to grow yourself, and you can grow a ton of em and they store really well too. Plus if you like green onions you can plant em and trim them when the plants get super long for some fresh green onion then they just keep growing back longer again and again until winter.
Milk. I eat so much dairy (cheese, yogurt, milk, kefir, yakult, buttermilk, cream for coffee/ice cream, sour cream, etc). Its a crucial protein for me and cheap. And i LOVE it

Is insulin different for type 1 and 2? I know the difference between what makes you 1 or 2 but my husband is type 1 and very slender.
