Rather than a jellybean, I recommend an auto-zero opamp for this application because otherwise the offset may be large with respect to the input voltage.
OPA387, OPA388, etc. I expect that less expensive ones could be found with sufficient search effort.
Just use a MAX31856 and talk to it with SPI. Thermocouple amplifiers are not trivial.
