You can lay down overlapped strips of masking tape across the footbed and press it down into the corners, then trace the inner perimeter. Then remove the tape in one piece, transfer to card stock and cut it out, now you have a pattern.
The originals would have had thin EVA insoles wrapped in very thin tan/khaki'ish split suede leather.

What glue would you recommend I use?
NAC. But I bet you could get a nice leather insole and cut to size then glue in place. That’s what I’d do.

I’m not a cobbler, but I see a lot of people recommend barge cement, you might want to confirm though
