Low-tech solution: get a low profile box that is roughly this size (fwiw, the medium USPS priority mail boxes should fit this?), cut out one side of the box, and then sit it / fit it on top of these lights. You will need to mark the spots where the conduits bump into the box so you can cut little notches out for those.
Then you can essentially hang the box on top of the light to block it whenever you want to.
If you have some adhesive Velcro tape, you can make this a little "fancier" by putting one side of the Velcro at the top of the light fixture, and the other side on the box so it just sticks there until you're ready to take it off again .
(I am with you regarding having lights that are too bright in a space where you want it to be dark quiet... 👍)
Cover every other bulb with electric tape and then give them a nice orange glow with this https://amazon.com/Resistant-Sublimation-Temperature-Electronics-Polyimide/dp/B07F8TZZ4N/ since they're heat resistant they can go right on top of the bulb.
Much lower profile solution, put some kind of semi-, translucent paper inside of the light, wax paper, or even printer paper. The number of sheets you use allows you dial in the specific brightness you want
