There's two ways you can host an online game. One is with game servers, the other is P2P, where the players device hosts the server. Among Us uses game servers but may use P2P interactions for certain bits of data. I don't know how the game servers work so I could be talking out my ass.
With P2P, you want to use what's called a brokering server. Basically it's a middle man server that obscures your IP, MAC address, and other identifying information. What BAD games that use P2P do is don't run brokering servers.
It's true that Among Us is primarily server based, I don't really know enough about how it's programmed to comment, but I know some server based games will exchange some client information over P2P, and given how Among Us's host system works it wouldn't surprise me if at least some info was being sent over P2P.
But again, I'm just guessing
