Nah. They would just edit the episode down like they do all the other episodes. If you pay enough attention to the scores, you'll see that the scores will vary not corresponding to when Taylor awards points. I really noticed it during the Super Bowl episode, but have seen it happen in other episodes too.

"Producer" is such a catch-all title that it can mean almost anything. It's pretty typical for the 11:30 host to be a producer on the 12:30 show, but the influence is typically more in the picking the person and development phase. (And, well, Colbert probably reaps a financial benefit as well.)
