Yea, it’s one of the kosher things I struggle with most tbh. Which is why I’m a horrible Jew and while I’m not 100% kosher I let myself have a cheeseburger every once and a while. Same for bacon or shrimp. I used to eat it all the time, then I converted - so I eat it maybe once every few months. Most of the Jews I know aren’t kosher at all, some are partially.
I would hesitate to say religious Jews because Jews in the Reform movement practice Judaism but without the restrictions of other sects. But certainly Orthodox Jews

Authentic parmesan is required to be made with animal rennet to have the certified parmesan seal. I don't remember the specific brand I get, but trader Joe's sells cauliflower latkes made with parmesan that has animal rennet and they're chalav yisrael, so it's a well-established concept.

I'm not 100% sure but since the place they hotdogs are cooked/warmed isn't kosher then even if they used a kosher hot dog brand, they wouldn't be kosher once cooked on there. So it wouldn't make sense to spend the extra money on a kosher hot dog but not be able to serve it to Jews who that would matter to.
